Chipotle-Lime Dressing

One thing that never goes out of style in our house are foods with LOTS of flavor and I've been dying to find a dressing that tastes like the vinaigrette at Chipotle. Its my go-to for a healthy meal on the go and I finally decided to play around with a recipe at home.

While I can't say this tastes EXACTLY like the restaurant version - it has a bit more of kick to it (you know I love spicy!). I LOVE it and plan on making it regularly.

Also - think outside the box - this is so much more than just a salad dressing. I drizzle it over my rice or quinoa to add flavor. Or you could use it as a marinade for just about anything!

Chipotle-Lime Dressing

3 adobo peppers in sauce
3 tablespoons fresh squeezed lime juice
3 tablespoons red wine vinegar
2 tablespoons honey
2/3 cup olive oil
1/2 tsp salt
1/4 tsp pepper

Blend until smooth - store 7-10 days in fridge!
