Savory Turkey Meal Prep Bowls


Simple is the name of the game when it comes to meal prep - let's face it, the second things get too complicated, THAT's when we throw in the towel! And meal prep? Definitely the number one piece of the puzzle when it comes to weight loss success and also probably the number one thing you're NOT doing right now - am I right?!




After 4 years of coaching - I can tell you that my clients who decide to learn, embrace, and take action with weekly meal prep are the ladies who create long-term success - and in our online community, sharing ideas like this keeps things fresh! I know I don't want to eat the same things over and over and over - BORING! This recipe makes 3 servings, but is super easy to double!

Savory Turkey Meal Prep Bowls

1 pound 99% lean ground turkey
olive oil
1 large sweet potato
1 bunch asparagus
dried rosemary
1/4 cup minced red onion
1 clove garlic, minced or pressed
salt + pepper

1. Preheat oven to 450 degrees. Peel and chop sweet potato into bite-sized chunks.
2. Heat medium skillet over med-hi heat. Chop red onion + mince garlic.
3. Trim asparagus, wash, dry and place on large baking sheet. Sprinkle with salt and pepper and drizzle with 1/2 tsp. olive oil.
4. In a large bowl, toss sweet potato with 1 tsp olive oil, salt + pepper to taste, and 1/2 tsp rosemary - then place on single layer on baking sheet with asparagus to one side. Place in oven once it reaches 450 degrees. Set timer for 10 minutes.
5. Add red onion and garlic to skillet and saute for 3-4 minutes until fragrant. Then add ground turkey to pan.
6. When turkey is almost cooked through, season with salt + pepper and 1/2 tsp of rosemary. Cook until lightly browned and cooked through. Then set aside to cool slightly.
7. When timer goes off at 10 minutes, remove baking sheet from oven and remove asparagus from baking sheet. Toss sweet potatoes together and place in oven for an additional 10 minutes.
8. Once sweet potatoes are roasted and tender on inside remove and make bowls.
