Greek Quinoa Salad

Have you ever gone vegan? For a day, a week, or even just one meal?! Honestly - its not for me on the long-term, but after doing the Ultimate Reset for the second time (21 Day Detox/elimination diet) - I can truly say its something everyone should do at least once to see how they feel!

This recipe comes from the Reset meal plan and everyone in my group looooved it!




It was perfect timing to do the Reset - we had just returned from our Success Club trip to Punta Cana - and while we had plenty of healthy food, workouts, and were super active during our trip, of course the wine + food were plentiful!

But when all the fun ended it was time to get back on track and I had a group of 30+ women all doing the Ultimate Reset together - sooo much easier when you share the experience. Don't go it alone, guys!



Greek Quinoa Salad

1/2 cup cooked quinoa
1/2 cup chopped tomato
1/2 chopped cucumber
large handful baby spinach, lightly chopped
1 tablespoon fresh lemon juice
1 tablespoon olive oil
pinch of sea salt
2 tablespoons chopped kalamata olives
2 tablespoons chopped parsley

Just mix it all together and you can serve immediately - or chill for a few hours. This serves 1-2 people, so make sure to double or triple the recipe for a crowd! The spinach will get wilty, so leftovers are NOT the best here.
