21 Day Fix Honey-Lime Shrimp Mason Jar Salad

Mason jar salads - a game changer when it comes to food prep and honestly - I'm a sucker for pretty packaging and you cannot beat sheer beauty of all those healthy foods stacked in a mason jar!

After already being obsessed with honey-lime dressing in my quinoa bowls - I was falling asleep the other night and dreaming up ways to use up the shrimp in my freezer for this week's meal plan.

Funny how that works - you're drifting off to sleep and then BAM - awesome idea and you just hope it sticks around to be there when you wake up in the morning!

You can use whatever fresh veggies you like here - red peppers, cucumbers, or even throw some avocado in at the end! But I'm following a strict eating plan this week and had to cut the avocado out, waaaaaahhhh!!!!!!

21 Day Fix Honey-Lime Shrimp Mason Jar Salad

4 mason 16 oz mason jars
1 pound large precooked shrimp, defrosted (you will some leftovers!)
2 cups grape or cherry tomatoes, halved
1 small red onion, diced
1 1/3 cup organic frozen sweet corn, cooked and cooled
4 large handfuls organic mixed greens

for the dressing:
1/4 cup FRESH lime juice
1/4 cup olive oil
2 tablespoons honey
1 garlic clove, crushed
1 teaspoon Flavorgod Chipotle seasoning (or southwest seasoning of your choice) or 2 tablespoons fresh cilantro

Combine dressing ingredients in mini-blender or shake in a shaker bottle! Good for 5 days in the fridge.

Layer ingredients into mason jars, with shrimp first, then veggies, then corn, with mixed greens going in last.
