21 Day Fix Honey-Lime Quinoa Bowls

And this Honey-Lime Quinoa Bowl will blow your mind. 

It's been almost a month since I switched to a primarily vegetarian diet - and quinoa has been a staple. This nutrient packed superfood, fills you up and provides that all-so-important protein! 

If you've been following my Facebook Page - you know I've been doing the The Master's Hammer and Chisel workout program since the beginning of the year - its all about building muscle and one of my biggest concerns with switching to mostly vegetarian was making sure my diet contained appropriate protein for all that muscle building.

Top it off with my soy sensitivity and quinoa has been my BFF for the past month - I add it to soups + salads, use as a side dish, and main dish. Bottom line - quinoa is my jam!

21 Day Fix Honey-Lime Quinoa Bowl

1 red container cooked quinoa 
1 yellow container roasted yams
1/2 green container roasted veggies
1 blue container avocado (or 1/4 whole avocado)

Optional: 1/2 green container kale or mixed greens

1/4 cup fresh lime juice
1/4 cup olive oil
1 garlic clove, crushed
1/4 teaspoon sea salt
2 tablespoons honey
2 tablespoons chopped cilantro

Throw it all together with one orange container of dressing and prepare your tastebuds for some dancing!


Food Prep Recipes:

3 yams, chopped + seasoned with salt+ pepper, toss with 2 tablespoons olive oil, roast in 450 degree oven for 20-30 minutes until browned (toss every 10 minutes).

Roasted veggies: 2 zucchini, chopped; 1 medium onion, choppped; 1 cup grape tomatoes; salt + pepper + olive oil. Cook same time as yams!

Quinoa: Cook according to package directions or use your rice cooker - 1 cup quinoa, 2 cups water, pinch of salt
