Strawberry-Avocado Quinoa Salad

Quinoa pronounced (keen-wa) - have you tried it? It been all the rage and like kale, going from the "crunchy-granola" dinner tables to restaurants and dinner tables everywhere.

Packed full of protein and carbs, it makes a great main dish if you're vegan or vegetarian - or a side dish for the meat-eaters. 




I personally, prefer it as a salad - there's a reason my Fresh Mama Quinoa Salad is one of my most popular recipes. The quinoa is so versatile, soaks up the flavors, fills you up and you can prep it 4-5 days ahead of time. So, if clean-eating's your game, then quinoa should be on the menu!


Strawberry-Avocado Quinoa Salad

2 cups cooked quinoa, cooled (I cook mine in my rice cooker!)
1 1/2 cups fresh strawberries, chopped into bite size pieces
1 fresh avocado, chopped into bite size pieces
4 green onions, chopped
handful fresh cilantro, chopped
3 tablespoons fresh lemon juice
4 tablespoons red wine vinegar
3 tablespoons olive oil
3/4 teaspoon salt

1. Mix lemon juice, vinegar, salt, and olive oil in bottom of large bowl.
2. Add remaining ingredients and stir well to coat evenly with dressing.
3. Chill a minimum of 2 hours before serving.
