Quinoa Breakfast Bake

We all know breakfast is the "most important meal of the day", right??? - truth be told breakfast used to be the hardest meal for me. Cold cereal makes me gag, but I love breakfast foods, like real breakfast food - full-on waffles and pancakes and bacon and sausage and eggs and...and..and - well you get the idea! 

This breakfast bake, gives you that "real" breakfast feeling without the hassle or the mess in the morning! Um, plus did I mention its super healthy?!

Quinoa Breakfast Bake

1 1/2 cups cooked quinoa
8 large eggs, beaten
1/2 cup reduced fat cottage cheese
1/4 cup shredded cheddar (or any cheese you like)
4 cups raw spinach
1 cup grape tomatoes cut in half
1/2 teaspoon sea salt
1/2 teaspoon ground pepper
large handful fresh basil, chopped (optional - lets be real, we don't all have fresh basil on hand)

1. Preheat oven to 375 degrees.
2. Mix all ingredients (except basil) together and pour into greased 13x9 pan (I used coconut oil).
3. Top with basil and bake for 20-25 minutes until cooked through.
4. Serve hot or cold - lasts for 4 days in fridge, covered tightly!

This one has been a life-saver this week alone - Mike is starting on the Body Beast, Beast Phase and this means cutting way back on his carbs. He's been having this along with his Shakeology every morning and I've been eating it after my workouts! A nice change from plain hard-boiled eggs.

Honesty moment: my kids won't touch it, but heck - maybe yours will. Let me know!
