Mandarin Mixed Greens Salad

Taking a break from the last-minute Christmas chaos to share this recipe with you guys! It's fresh, it's tangy and the perfect start to an elegant meal. Or serve with a side of chicken or salmon and you have yourself a complete meal.


Its been a whirlwind around here - family birthday's and Christmas come hand in hand, plus my baby brother came for a 10 day visit all the way from Sweden.

My boys adore him and not just because he brought an insane amount of Swedish candy



- and in addition to having the built-in entertainment for the boys, he also likes to cook, work out and do most of the same things I do.



Well, except for the part where he's a computer genius - somehow that portion of the DNA went entirely to him and skipped me.

A couple nights before he left - we enjoyed a traditional Swedish dinner complete with bacon and potato pancakes! Yep - bacon for dinner!



Needless to say, this was not a 21 Day Fix approved meal, but it was enjoyed by all! We miss him already, but so thankful he takes the time to come visit and spoil the kids. Looking forward to planning our trip to visit him - hopefully in 2018 (and maybe bacon for dinner every night?!).

Thankfully, I finished up 30 days of Core de Force before he arrived! So much fun + I'm at a weight where I feel amazing (didn't weigh myself before or after) - and while my current "transformation" may not be earth-shattering, its simply the reality of being consistent since January.


Seriously - the results here are all about the core, obliques and mom-tummy tightened up + toned. I've never experienced a program that truly focuses on this "problem" area like Core de Force!

Mandarin Mixed Greens Salad

6 oz. mixed baby greens
1/3 cup dried cranberries
1 15 oz. can mandarin oranges
1/2 cup crumbled feta (gorgonzola and goat cheese are delicious as well!)

*optional
1/3 cup thinly sliced red onion
candied pecans or walnuts

Dressing:
1/4 cup rice vinegar
2 tablespoons honey
1 1/2 teaspoons Dijon mustard
2/3 cup vegetable oil or walnut oil (for best flavor or do half + half)
1/2 tsp sea salt
1/4 teaspoon pepper


Place greens, cranberries, oranges, and cheese in a large salad bowl. Mix dressing ingredients thoroughly in small Cuisinart or whisk until combined.  Doesn't get much easier than that!
