Clean Turkey Chili

Would you believe chili is one of the meals no one complains about in our house? Its right up there with spaghetti, pizza, and Clean Eating Sausage and Potatoes

So, you've already seen my Crockpot Sweet Potato Chili and Easy Crockpot Chili - so why not add one more to your chili recipe collection?! This one is super clean and actually inspired by the Body Beast nutrition plan!

You might not think of me as being the Body Beast kinda gal and you would be correct - this guy is the beast in our house! He's lost 45 pounds of fat and then gained 15 pounds of muscle, since starting with P90X3 last year and now Body Beast since September - truly an amazing program and you can read his full transformation story HERE

So, this chili recipe was the first thing to catch my eye when going through the program details and nutrition plan (its not like Mike was actually going to do his own meal plans, lol!).

So, a few tweaks and of course I doubled the recipe, because the concept of leftovers is quickly becoming a fantasy with these 2 growing boys - and this one has been a regular in our rotation every couple weeks.

This can be made in your crockpot or done 100% on the stove-top, I opt for the crockpot version!

Clean Turkey Chili

2 tsp olive oil
2 pounds ground turkey
1 large onion, chopped
2 bell peppers, chopped
6 cloves garlic, crushed or finely chopped
1 tablespoon cumin
2 tablespoons chili powder
1 tsp sea salt
1/2 teaspoon cayenne pepper
1 (15 oz) can pinto beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (28 oz) can tomato sauce (no-sugar added)

Optional toppings:
fresh avocado
Greek yogurt
siracha
fresh cilantro
fresh green onion
grated cheese

1. Heat oil on medium-high in large skillet (or dutch oven if cooking on stovetop).
2. Add turkey, onion, bell peppers, and garlic - cook about 10 minutes until turkey is cooked through and no longer pink. Then transfer to crockpot heating set on LOW.
3. Add cumin, chili powder, salt, and cayenne pepper, and stir well.
4. Stir in beans and tomato sauce, cook on low 8-10 hours, stirring well before serving! **If cooking on stove-top, simmer in dutch oven 15-20 minutes until thickened.

Serve and top with desired add-ins. Perfect for those of us eating clean and satisfies the whole family!
