Easy Peasy Rice and Beans and Coming Clean

Ok, here goes...You know how you have that girlfriend you haven't talked to for ages? You really want to give her a call, but somehow life gets in the way. That's kind of how I feel sitting down to write this post. Slightly embarrassed, but also confident that our relationship is stronger than a few missed phone calls or blog posts!



Somehow, everytime I sat down to write a post, the words just wouldn't come. I literally have over 5 started, but unfinished posts. I was feeling uninspired, cooking lots of the same things over and over and over again - a little bit of the light had gone out on my time in the kitchen.

These past few months have been a huge change for me internally - and truth be told, I don't share too much over here. I've kept it to recipes, tips, and the "how-to's" of eating healthy, feeding your family healthy, and keeping things simple.




These past few months, I have been working on myself and my business, but somehow it didn't leave much time to share things over here...My Facebook Page has been where I've shared my heart, but that needs to change.

One thing, I've learned over the past few months, is that whatever we do in life, we must do it with passion. Our work, the free time, the people we decide to spend our time with - it has to feel right! And I just wasn't feeling the passion to sit down and share recipes, when I was struggling so much internally with my relationship with food.

Somehow I saw this blog as a place where you come to get information and you would see me as less than perfect. It has taken me 39 years to come to terms with my emotional binge-eating. To get honest with myself. To take action and decide to make a change.

If you're still reading, I thank you for sticking through this and promise, I'm on a path to truly follow my heart, which yes, does include sharing yummy recipes here on the regular! Its part of who I am and now I will simply be sharing in a way that reflects where I truly want to go - I hope you'll join me!

Ok, enough of the mushy mush - time to get down to business! If you've been following my Instagram, you know its been chock-full of delicious, fresh, food! As of Monday, I completed 21 Days of the Ultimate Reset program - I'll go into more details on a later post, but basically I chose this as a stepping stone for my new relationship with food.

The program comes with a complete meal plan/shopping list and the vast majority of the recipes are amazing! This program re-awakened my love of cooking, even though the recipes are so simple, I was using fresh herbs, spices, and enjoying every moment.




These pinto beans and rice were an instant hit with the whole family - full of flavor and so versatile. I was eating these almost once a day during Phase 2 of the program!




Easy Rice and Beans

1 15 oz can organic pinto beans (I used Trader Joe's)
3 tablespoons water
 2 tsp olive oil
2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp ground coriander (pleeeease do not forget this ingredient!)
2 tsp Bragg Liquid Aminos (found in gluten-free or health-food section of grocery store)
1 tsp sea salt
2 cups cooked brown rice 

1. Heat oil in small saucepan and add beans, water, and spices
2. Add Bragg Liquid Aminos and sea salt - allow to simmer for 3-5 minutes
3. Mix warm cooked rice and bean mixture in a large bowl until thoroughly combined

Eat immediately, or store in airtight container in fridge for up to 4 days. Perfect for tacos, burritos, lunch bowls, as a side-dish, even on salads! Seriously - I we can''t get enough and its been a huge part of my Sunday Meal Prep - could NOT be easier!
