My Famous Cucumber Salad!


Gaaah! I posted a quick photo of this on my Facebook page last night (want to connect? Feel free to pop me a friend request!) and now everyone is asking for the recipe - I won't be winning any awards with this blog post, but I just had to get it up to share this recipe with you guys!

I don't know about you, but we are soooo ready for summer here in New England - its been stop and go with the weather and it finally seems like shorts weather is here to stay! This means breaking out the grill and whipping up some delicious sides - I highly recommend you put this recipe on the menu for your next get together! Crunchy, tangy, and so easy to throw together - you will be making this time and again (just as I have been for over 10 years!).


Famous Cucumber Salad

2 European cucumbers
1 medium red onion
1/3 cup mayo (regular or reduced-fat)
2 tablespoons sour cream or Greek yogurt
2 tablespoons cider vinegar
1 tablespoon honey
1 teaspoon poppy seeds
salt and pepper to taste (I use 1/2 tsp salt and 1/4 tsp pepper)

1. Peel the cucumbers and then use a spoon to scrape the seeds out.
2. Slice thinly into half moons.
3. Slice onion in half, and then into thin strips.
4. Place cucumbers and onion into large bowl.
5. Whisk together remaining ingredients for dressing. Keep separate and only toss with cucumber/onion mixture immediately before serving - otherwise the cukes will lose their CRUNCH!

I originally found this recipe years ago in a Martha Stewart Everyday magazine and its a been a staple in our summer time rotation, since then (with a few minor tweaks).
