Healthy Pasta Bake

Sometimes its the easiest recipes that sneak up on us and end up being a favorite. I had no intention of sharing this one on the blog - using whole wheat pasta can be a gamble (um, sorry - but most of the time it tastes like cardboard). However, I've learned to always snap a pic, juuuust in case a recipe is a hit!


Our afternoons and weekends have been chock full of activities for the boys. With both boys playing baseball and Ev playing travel soccer + now Colin is adding hockey back into the mix, its been a whirlwind of running from one kind of practice or game to another.

Most dinners these days are eaten at either 4pm or 830pm - as we are out of the house most evenings and this can make dinners super tricky. I actually made this one on Saturday night after a day on the soccer field and then dividing and conquering separate baseball practices.

They were hungry and a little cranky after a day on the fields, but smiles were had by all once they took a few bites. Both went back for multiple helpings and declared it a favorite - so despite my lack of preparation or anticipation of sharing this here - I just knew you busy mamas would love it! The casserole style covers up the "cardboardiness" of the pasta and no one was the wiser.

Healthy Pasta Bake
1 pound cooked organic whole wheat penne or ziti
1 tablespoon olive oil
1 pound spicy chicken sausage (casings removed)
1 pound lean ground beef
1 large jar organic pasta sauce (40-46 oz. works)
1/2 cup shredded cheese of your choice
8 oz. fresh mozzarella
1/4 cup fresh Parmesan
1. While pasta is cooking, brown sausage and ground beef in large skillet. Preheat oven to 375 degrees.
2. Drain pasta and return to pot.
3. Add cooked meat, shredded cheese, and pasta sauce. Stir well to combine.
4. Pour into large 9x13 baking pan, top with fresh mozzarella slices and parmesan.
5. Bake 20-25 minutes until mozzarella is melted and lightly browned.
6. Let rest 5 minutes before serving.
