Spicy Drunken Noodles (21 Day Fix Approved)

We returned home from a mini-vacation yesterday and after 2 days of eating out, I was sooo ready to get cooking again. I left the menu up to my 9 year old, and he chose these drunken noodles. They were a hit last time we made them and to be honest, I think he was just looking for a reason to eat some shrimp! Both my boys have developed a love for shrimp and this recipe does the trick!




The whole meal takes about 20 minutes start to finish, is full of flavor, and approved by the whole family. Plus it totally works for 21 Day Fix, as long as you use these awesome brown rice noodles. I order mine from Amazon!


And in case you're wondering WHY they are called "Drunken Noodles", apparently they are best enjoyed with an ice cold beer - I will have to try this combo next time!


Spicy Drunken Noodles

8 oz. pad thai brown rice noodles, cooked to package directions
1 lb. medium, pre-cooked shrimp
3 green onions, sliced into 1/2 inch pieces
3-4 cloves crushed garlic
3 tablespoons oyster sauce
3 tablespoons soy sauce
2 teaspoons honey
2 tsp siracha hot sauce (or more if desired!)
2 tablespoons water
2 tsp oil
1 cup fresh basil leaves, roughly torn

1. Heat oil in large skillet over medium-high heat
2. Add garlic and green onion to pan and saute 1-2 minutes until fragrant
3. Mix oyster sauce, soy sauce, honey, siracha, and water in small bowl
4. Add shrimp and sauce to pan, tossing well to combine and warm shrimp through.
5. Add cooked noodles, coating well with sauce and add in basil, stir until basil is wilted.

Serve immediately, alongside snow peas or broccoli for a complete meal! Add more siracha as desired:)

21 Day Fix Breakdown: 1 cup of noodle mixture, 1 yellow, 1 red, 1 orange. Add a side of vegetables for a green!

Our little vacation was pretty amazing - nothing fancy, just a trip up to our lake house to open it up for the season and have some down time. These boys were right at home....a place where boys can boys and dogs can be dogs. I'm not sure who was more excited to be there or who was more sad to go. We all had a blast and are counting the minutes until we head back up!
