Simple Curry-Cayenne Salmon

Need a healthy dinner in under 20 minutes??? Viola! I give you this Simple Curry-Cayenne Salmon. Even easier than Easy BBQ Salmon




I'm currently on my first week of 22 Minute HardCorp - and trying something new. No carbs after 2pm, which means I front load my day with carbs and fruit and dinner is protein, veggies, and healthy fat. It was a little daunting at first, but gotta say - so far so good!

This salmon recipe was literally the result of staring blankly at my spice cabinet and waiting for inspiration, hahaha! Sometimes the best recipes start that way!

I used the leftovers for a kale/quinoa/sweet potato balsamic bowl for lunch the next day. Amazingly delicious!


Curry-Cayenne Salmon

1.5 pounds fresh salmon, cut into 4 equal portions
sea salt and fresh cracked pepper
1/2 teaspoon curry powder
1/4 teaspoon cayenne pepper
1 large lemon, thinly sliced
2 tablespoons coconut oil

Preheat oven to 425 degrees

1. Season tops of salmon evenly with salt, pepper, curry powder, and cayenne pepper.
2. Place lemon slices on each salmon portion, then dab with coconut oil.
3. Bake 13-15 minutes until salmon is cooked through and flakes easily with a knife.
