Clean Eating Plantain Fritters

Looking for a sweet treat to share with your love on Valentine's Day, but don't want to go crazy with the calories and sugar?? Well, here you go! Clean Eating Plantain Fritters for the win!

This recipe came about due to my love of tostones - I haven't had any in ages, because twice fried does not exactly scream clean eats and honestly - I have no clue where I would even get good ones around here...Goya does have a nice frozen version, but just not the same!

So, you're wondering - why the plantains??? Well - actually on the 21 Day Fix eating plan, plantains are the second most nutrient dense carbohydrate (after my other love - sweet potatoes!). So, I thought why not create a healthy version of delicious tostones!



Please note - I in no way followed any recipe, this was just a combination of the common sense that comes from years of creating recipes...So feel free to play around with it and make it your own! Sprinkle with extra cinnamon or add in some different flavors...maybe even some cocoa nibs!



Clean Eating Plantain Fritters
1 large very ripe plantain
1/4 cup organic coconut oil
2 teaspoons corn starch
1/2 teaspoon cinnamon
pinch of salt
honey (optional)

1. In a large skillet, heat coconut oil over medium heat.
2. While skillet is heating, mash plantains and add in corn starch, cinnamon, and salt until well combined and just a few chunks of plantain remain.
3. form half-dollar size fritters and place in hot skillet until browned and crispy (about 3-4 minutes per side) but keep an eye on them!
4. Remove from pan and drain off excess oil on a paper towel, then place on serving plate.
5. Drizzle with honey if desired!
