This recipe came about due to my love of tostones - I haven't had any in ages, because twice fried does not exactly scream clean eats and honestly - I have no clue where I would even get good ones around here...Goya does have a nice frozen version, but just not the same!
So, you're wondering - why the plantains??? Well - actually on the 21 Day Fix eating plan, plantains are the second most nutrient dense carbohydrate (after my other love - sweet potatoes!). So, I thought why not create a healthy version of delicious tostones!
