Fresh Mama Finds: All things COCONUT!

Let it be known that I looooooove coconut - sadly though, no one else in my family likes it. I can sneak it into granola, or use coconut milk in curries, but otherwise, they turn up their noses.  Hence, my love of coconut has fallen to the wayside...

Well, recently it has been re-ignited the tastiest of ways - so today I'm sharing a few finds that have brought coconut back into my life without complaints from my crew!


Yup - that's right! Coconut-Almond Butter sweet elixir from the Gods - sweet, healthy, and packed with flavor - I came upon this concoction at Target of all places! Its been a dream on Ezekial toast and is now part of my "go-to" Shakeology recipes. I've been using this recipe every morning since this discovery!

Coconut-Chocolate Dream Shakeology

1/4 cup almond-coconut blend milk (or unsweetened milk of your choice)
1 cup water
5 ice cubes
1 scoop chocolate Shakeology (this is also yummy with Strawberry!)
1-2 teaspoons coconut-almond butter

Blend and enjoy - yum, yum! Like starting your day with a decadent milkshake - curbs those cravings, fills you up, and gives you energy!


Confession - I've tried coconut flour in the past and guess what? It ended up in the trash. Booooo, but my attempts at pancakes and a few other recipes were dry, crumbly, and blech. So I gave up on it. 

Then one of my clients sent me a recipe for these Coconut-Blueberry Bars - they looked delicious and she said they were "legit" as far as using the coconut flour. So I was going to give them a whirl, but use almond flour --- until coming across this organic coconut flour at Home Goods of all places!???? 

Who knew - but they have this awesome aisle with tons of organic, gluten-free, and other whole foods. Helllooo, just another reason to shop there!

Its the dead of winter here in New England - not exactly berry season, so I decided to skip the icky berries at the store and combine my love of chocolate and coconut. I took a deep breath, prayed to the baking gods and was beyond thrilled when these healthy "mounds" bars came out amazing and, wait for it....the whole family loved them!!!! The coconut flavor is actually quite mild and they are not overly sweet like many coconut desserts. 

Truly,  NOT the most photogenic of treats, but trust me, they are delicious! The hard part is to only eat one!



Healthy Coconut Chocolate Bars

1 cup coconut flour
1/2 cup shredded, unsweetened coconut
1 teaspoon cinnamon
1/2 teaspoon cream of tartar
1/2 teaspoon sea salt
1/4 cup honey
1 cup applesauce
2 tablespoons melted coconut oil
2 large eggs
1 cup almond milk
1 cup dark chocolate chips

Preheat oven to 350 degrees
Spray 9x9 pan with coconut oil

1. Combine coconut flour, shredded coconut, cinnamon, cream of tartar, and salt in a mixing bowl.
2. Whisk together honey, applesauce, coconut oil, eggs, and almond milk.
3. Pour we ingredients over dry and stir until coconut flour has soaked up the liquids and its a nice batter consistency (trust me, it takes a couple minutes, but it WILL happen).
4. Fold in the dark chocolate chips and pour into greased pan
5. Bake 30-35 minutes (mine were done at 30 minutes) until the top and edges are browned.

Store in an airtight container for 3 days. I did not try to freeze, as they were all eaten within the 3 days, but I might try in the future!

If you've given up on coconut flour, please give these a try - yes, it is different from regular baking, but its still delicious!
