Crockpot Spicy Sausage Bean Soup

Yup its cooooooold in New England! Like high of 16 cold, like - jacking the heat up and not giving a crap about the heating bill cold and "please fill my belly with some warm soup" cold! You get the idea - and this spicy soup is exactly what's needed to get through these cold winter days. So simple, but full of flavor. Your family will be begging for second helpings!


Spicy Sausage-Bean Soup

1 pound spicy sausage (I used lean, organic, free-range pork)
1 medium onion, diced
2 medium carrots, sliced in 1/4 inch rounds
1 28 oz. can organic whole peeled tomatoes + liquid
1 can organic cannellini beans, drained and rinsed
2 cups organic chicken broth
2 teaspoons oregano
2 handfuls torn kale or baby spinach
salt and pepper to taste
1. Brown the sausage and drain any excess fat
2. Add to crockpot with onion, carrots, tomatoes, beans, broth, and seasonings
3. Stir well to combine
4. Cook on low 8 hours or high 4-5 hours until carrots are tender.
5. Add kale 10 minutes prior to serving, or add spinach immediately before serving.
There are so many variations you could try with this, so use your imagination and get creative - and suit to your family's taste. This one was a hit with the kids and adults in our house! Enjoy!
