Back-Up Dinner: Crockpot Sausage and Sauce with Pasta

We all have "back-up" dinners right??? Frozen pizza, tuna sandwich, or gasp! the drive-thru? something quick - easy and brainless for those days that just refuse to go according plan.

Well, yesterday - we had one of those days. Poor C woke up with a nasty, red, crusty eye. Ugh - being a nurse, I am not one to head straight to Urgent Care without sufficient cause, but eyes are one thing I do not mess around with...So we were off to Urgent Care as soon as it opened.



After a quick check, yup - eye drops needed ---> off to the Pharmacy and just like that the whole morning was gone. I had missed my chance at early morning grocery shopping and fighting the Sunday crowds drives me crazy! Time to check the freezer and pantry for a back-up dinner... 

Sausage in the freezer, pasta sauce, and pasta in the pantry - whew! 

This one might be a "back-up dinner" in my mind, but my husband actually requests it on a regular basis. Keep the ingredients on hand and you won't need to hit the drive-thru!


Crockpot Sausage and Sauce with Pasta

1 package frozen turkey or chicken sausage (fresh works too, decrease cook-time by 1 hour)
1 28 oz jar pre-made spaghetti sauce
1 package pasta of your choice (I use gluten-free brown rice/quinoa pasta from Trader Joe's)

1. Place frozen sausage in bottom of slow-cooker.
2. Pour sauce on top - set slow-cooker to low for 5-6 hours until sausage is cooked through.
3. Cook pasta according to package directions - voila! Dinner is served!

* You can do this on the stove-top as well, simply simmer in saucepan for 30-45 minutes until sausage is cooked through*
