As we ring in the New Year - I thought, no better way than to recap the recipes you mamas have loved in 2016. Here's a round-up of my most popular recipes over the past year - all super simple, all super delicious and perfect for busy families who love to eat!

We all know breakfast is the "most important meal of the day", right??? - truth be told breakfast used to be the hardest meal for me. Cold cereal makes me gag, but I love breakfast foods, like real breakfast food - full-on waffles and pancakes and bacon and sausage and eggs and...and..and - well you get the idea!

Hard to believe its been 2 weeks since this amazing trip - those of you who know me, know that traveling is NOT my thing. I stress, I have anxiety and then add traveling without my boys - well that adds a whole other layer of craziness.

When my coach first talked to me about this idea of a retreat for all the leaders on our team - a trip to celebrate, bond, and learn/grow together - I was  freaked out at the thought of being gone while the boys were in school. But my husband, being the smart business guy that he is, said I couldn't miss it - that it was a rare opportunity for myself and my team. 

So I sucked up all that anxiety, got my shiz together and made it happen!

Easy Peasy Rice and Beans and Coming Clean

Ok, here goes...You know how you have that girlfriend you haven't talked to for ages? You really want to give her a call, but somehow life gets in the way. That's kind of how I feel sitting down to write this post. Slightly embarrassed, but also confident that our relationship is stronger than a few missed phone calls or blog posts!

Somehow, everytime I sat down to write a post, the words just wouldn't come. I literally have over 5 started, but unfinished posts. I was feeling uninspired, cooking lots of the same things over and over and over again - a little bit of the light had gone out on my time in the kitchen.

These past few months have been a huge change for me internally - and truth be told, I don't share too much over here. I've kept it to recipes, tips, and the "how-to's" of eating healthy, feeding your family healthy, and keeping things simple.

Superfood Power Salad with Mango and Avocado

Hi, my name is Lil and I'm addicted to salad. Even as a kid, I loved salad and in particular creating new and delicious salad dressings!

Recently, this particular salad has been the objection of my obsession. Tasty, easy to make and a meal you can feel good about eating. Add some lean protein if you like, but I prefer it vegan - the quinoa and chickpeas pack in all the protein you need for a complete meal.

I'm on Week 2 of 21 Day Fix Extreme (you can follow my journey here) and this salad has been a staple, not only for myself - but my awesome neighbor is just as obsessed. We eat dinner together with our kiddos twice a week and we've made it almost every time, lol! Did I mention we are obsessed???

Neither of us was too keen on the blueberries, so first we went sans fruit - but hellloooo, mango!!!  Perfection!

5 Simple Summer Salads

You guys - I know its been a while since I posted - the end of school year is always so crazy! Well, the insanity has come to an end - the boys had what was quite possibly their best year, yet!

Taste of Summer - Starts June 13th!

Its a fact - things are totally crazy here this month! Baseball season is winding down (which means play-offs), the big guy is playing soccer and the not-quite-as-big-guy is playing hockey. Throw in end of school year stuff, birthday, Father's Day and more - you get one hectic schedule!

Coconut-Coffee Smoothie

When you're from New England - you drink iced coffee year round. Yes, its a thing. Truth be told - I am not a coffee drinker, but when its hot - I crave coconut iced coffee. 

Sadly, this is how my first iced coffee of the season went --- had about 2 sips and boom, spilled everywhere! Bummer!

Luckily, I found a way to quench that craving - no sugar, no empty calories! I came upon this Toasted Coconut Califia Farms Almond Milk at Target --- Oh, my gosh. Deeee-licious and inspiration for making a healthy version of my fave summer drink.

My Famous Cucumber Salad!

Gaaah! I posted a quick photo of this on my Facebook page last night (want to connect? Feel free to pop me a friend request!) and now everyone is asking for the recipe - I won't be winning any awards with this blog post, but I just had to get it up to share this recipe with you guys!

I don't know about you, but we are soooo ready for summer here in New England - its been stop and go with the weather and it finally seems like shorts weather is here to stay! This means breaking out the grill and whipping up some delicious sides - I highly recommend you put this recipe on the menu for your next get together! Crunchy, tangy, and so easy to throw together - you will be making this time and again (just as I have been for over 10 years!).

Healthy Pasta Bake

Sometimes its the easiest recipes that sneak up on us and end up being a favorite. I had no intention of sharing this one on the blog - using whole wheat pasta can be a gamble (um, sorry - but most of the time it tastes like cardboard). However, I've learned to always snap a pic, juuuust in case a recipe is a hit!

Taco Egg Cups

Cinco de Mayo  - is there a more delicious holiday?! I think not! What better to way to start the celebrating, than with these Taco Egg cups? 

Eggs - wonderful eggs. We go through them constantly in our house - and I'm always looking for new and tasty recipes. Keeping lean proteins on hand is essential to staying on track with clean eating and these make a perfect breakfast, lunch, or snack!

Taco Egg Cups

1/2 pound cooked ground beef or turkey taco meat (Homemade Taco Seasoning)
3/4 cup grape tomatoes, cut in half
1/4 cup sliced onion (red, white, or green)
large handful baby spinach
8 eggs
1/2 cup milk
3/4 cup grated cheddar cheese (divided)
1/2 teaspoon salt
1/4 teaspoon pepper

1) Preheat oven to 350 degrees and spray muffin tin well with coconut oil or olive oil. (If you have silicone muffin liners, use those!)
2) Mix all ingredients in a large mixing bowl (reserve 1/4 cup cheese!), making sure the eggs are whisked completely.
3) Using a soup ladle, spoon out the mixture evenly into the muffin tins and sprinkle with remaining 1/4 cup cheese.
4) Bake 15-20 minutes until eggs are cooked through and toothpick inserted in the middle comes out clean.
5) Allow to cool completely and carefully remove from muffin tins. Makes 12 muffins.

Store in tightly sealed container in fridge for 3-4 days. One serving = 2 egg cups. Enjoy!

Spicy Drunken Noodles (21 Day Fix Approved)

We returned home from a mini-vacation yesterday and after 2 days of eating out, I was sooo ready to get cooking again. I left the menu up to my 9 year old, and he chose these drunken noodles. They were a hit last time we made them and to be honest, I think he was just looking for a reason to eat some shrimp! Both my boys have developed a love for shrimp and this recipe does the trick!

Ok, so Last Week's Meal Plan  may have been my absolute favorite in a long time... Have you ever tried a no-carb or low-carb plan? To be honest, I absolutely do not believe in restricting any one specific food group. My body needs proteins, fruits, vegetables, and healthy fats. 
BUT - the nutrition plan for my new program, 22 Minute-HardCorps, suggests no carbs after lunch and I decided to go for it!

This recipe came about due to my love of tostones - I haven't had any in ages, because twice fried does not exactly scream clean eats and honestly - I have no clue where I would even get good ones around here...Goya does have a nice frozen version, but just not the same!

Meal Plan of the Week and FREE 4-Day Fit Club

Ack! It's Monday and I'm just now writing up this week's meal plan for you guys!!! As I mentioned in this Previous Post - the book Better than Before has rocked my habit-forming world for getting the New Year off to the right start.

So today, as I sit here typing - I realized I need to plan my menu earlier in the week! I mean duh- right? I shouldn't wait until Saturday to start thinking about it - that is just too late and then I'm cramming in the recipe planning + shopping all in a day or so. Then, I'm late to the game in getting the post up to you guys, so here's my accountability that next week - the post will be up and DONE for Sunday night!

Fresh Mama Finds: All things COCONUT!

Let it be known that I looooooove coconut - sadly though, no one else in my family likes it. I can sneak it into granola, or use coconut milk in curries, but otherwise, they turn up their noses.  Hence, my love of coconut has fallen to the wayside...

Well, recently it has been re-ignited the tastiest of ways - so today I'm sharing a few finds that have brought coconut back into my life without complaints from my crew!

Its Monday again - and although I wrote out my meal plan and did my shopping already, I'm just now getting this up on the blog for you guys...Another busy weekend full of hockey, soccer, time on the slopes, and watching a (hugely disappointing) football game with friends..sigh. There's always next year!

Crockpot Spicy Sausage Bean Soup

Yup its cooooooold in New England! Like high of 16 cold, like - jacking the heat up and not giving a crap about the heating bill cold and "please fill my belly with some warm soup" cold! You get the idea - and this spicy soup is exactly what's needed to get through these cold winter days. So simple, but full of flavor. Your family will be begging for second helpings!

Another week and I guess we need to feed the troops, right?? Having 2 growing boys - its a never-ending stream of snacks punctuated by 3 square meals a day. The crockpot has been my right-hand woman in the kitchen these days - barely a day goes by without this baby working! Soups, chili, food prep, and more - love my crockpot!

Fresh Mama Finds: Foodstirs and Better than Before

Another week gone by and more fun stuff to share with you guys - having this blog + the past year in my business has been life-changing in so many ways. You may not guess it, but I'm actually a pretty big introvert...Big crowds, parties, new situations - totally freak me out. Truth be told, at the end of the day I'm happiest at home, snuggled up with the hub or my boys on the couch.

One thing that really gets me stressed??? Travel - I worry the weather will be bad, that I will forget my necessary documents, that someone will get sick, the list of reasons why I shouldn't travel grows and grows anytime I anticipate a big trip. Its actually a huge reason we bought a lake house - instead of traveling on vacation each year, I can simply have a vacation that is home. But this time, I'm deciding to step outside my comfort zone and take a leap of faith!

Just getting Started....

Wow - soo much to share with you guys and I haven't had a minute to sit down and just write. If you follow me on Facebook - you may have noticed some pretty exciting things happened with Team CoreBalance... Exactly one week ago - I received a phone call from Beachbody corporate - I knew it was coming, I knew our team had done amazing things in 2015 (a team that only got started this time last year) - but when I got the call making it official that we were a Premiere team (only 100 coaches out of 400,000 achieved this goal in 2015!) - it suddenly all became so REAL and the emotions came tumbling out...

Back-Up Dinner: Crockpot Sausage and Sauce with Pasta

We all have "back-up" dinners right??? Frozen pizza, tuna sandwich, or gasp! the drive-thru? something quick - easy and brainless for those days that just refuse to go according plan.

Well, yesterday - we had one of those days. Poor C woke up with a nasty, red, crusty eye. Ugh - being a nurse, I am not one to head straight to Urgent Care without sufficient cause, but eyes are one thing I do not mess around with...So we were off to Urgent Care as soon as it opened.

Basically a weekly round-up of anything that my family is enjoying and might add value to your life. If there's one thing, I always appreciate - its tips from other moms like me! So, why not pay it forward here and talk to you guys about things that have caught my eye???

First up - Tinker Crate - a monthly subscription service for the little scientist in your life. Colin received a 3 month subscription for his birthday and it was perfect. He's curious by nature and this was right up his ally. Definitely plan on adult supervision and assistance - he's 8 and could read/follow the directions - but it would have been overwhelming if attempted on his own. Plus - it was awesome one-on-one time! Check it out!

First Meal Plan of 2016: Hello New Year!

Here we are - 3 days into 2016. I hope 2016 was a good one for you and your family!

Believe me, I know some years just plain suck. That was 2013 for us -- loss, grief, and sadness hit our family hard in 2013. Despite the royal suckiness of that year it reminded us life is short and fueled us forward toward some important changes. We decided it was time to start making our "big-scary" dreams a reality. In fact, it was the year this blog was born:) Sometimes you need the hard times to give you a little perspective and kick in the pants...

Looking back, 2015 has been one of the best years for our family - we had a huge dream come true with the purchase of our lake home and I left my office job to come back home full-time with the boys (while growing my coaching business!). Both of these decisions have brought so much joy to our family on so many levels.

The hub and I have been together for 22 New Years and it was probably around year 6 that we decided that being home, in our pjs, snuggled on the couch is the best way to ring in the New Year...So, we toasted with the boys around 9pm (Presecco + pomegranates for Mike and I, OJ for the boys) with our rarely used crystal. Cheers!
