'Tis the Day After Christmas in our house - a day for giving all the gifts a test run, relaxation, and it looks like a nice family walk will be in order...the weather in New England has been downright tropical - not the norm for this time of year. Where's the snoooowwwww??????
Despite the bizarre weather - our family had a truly magical Christmas.

The whole family came - the kids love spending time with their cousins! Wish I'd snapped a few pics, but I was busy in the kitchen!
And when it was all over - I snuggled up on the couch with my new cozy blanket, so thankful to give our kids a holiday filled with happy memories....Jade had a great day as well - including eating a package of Swedish Fish, so apparently she was pooped out! Ayayayay - yes, Swedish Fish. Thankfully it wasn't gum or anything that would have required an emergency visit to the vet!
I actually didn't take any photos of dinner - my Mom was here with her good camera, so she took a bunch. I did snap quick pic of the salad, though - because it was just soooo pretty! Incredibly simple, but full of flavor! Here's the recipe:
Pomegranate-Blue Cheese Salad
6 cups mixed greens
1/2 cup crumbled blue cheese
1/3 cup pomegranate seeds
Serve with a light drizzle of Apple Cider Vinaigrette
Yum, yum!
As you may have noticed - I've been posting more frequently on the blog...My goal for the New Year is to blog a minimum of 3 times/week. Looking forward to sharing some changes to the blog with you - always recipes, but there will be more to look forward to, as well.
