Portabello + Goat Cheese Omelet {21 Day Fix Approved}

Ah - eggs! In our house we go through about 2 dozen/week...from my hub's hard-boiled eggs on-the-go, or my 7 year old that starts almost every day with 3 fried eggs, or my 9 year old who loves them scrambled, plus my own obsession with eggs as a post-workout snack.  Seriously - what's not to love about eggs?

We get them delivered from a local farm with our CSA box each week - nothing like farm fresh eggs! Ok, so about this omelet - the recipe comes from the official 21 Day Fix cookbook "Fixate" by Autumn Calbrese. Love, love, love, this cookbook - all tasty, simple meals, totally up my alley! My photo might not be perfect like the one in the cookbook, but take my word for it - the flavors are delicious. I actually was too lazy to make the omelet a few times, so just did a scramble instead. This was my prettiest, blog-worthy concoction...

Portabello + Goat Cheese Omelet

2 large eggs (preferable farm fresh!)
2 Tablespoon unsweetened almond milk
1/4 tsp. salt
1 dash pepper
1 tsp coconut or olive oil (I spray the pan with Trader Joe's cooking spray)
3/4 cup sliced baby portabello mushrooms
1 Tablespoon goat cheese

1. Whisk eggs, almond milk, salt, and pepper in mixing bowl.
2. Spray pan with coconut oil or coat with olive oil and heat over medium-low.
3. Add mushrooms, cooking 5 minutes until tender, then remove from pan.
4. Add egg mixture and coat bottom of pan, lifting edges to let uncooked eggs flow underneath to cook.
5. When eggs are almost set, add in mushrooms and goat cheese, then gently fold in half and allow to cook another 2 minutes.
Serve immediately! So filling, all you need is a little side of fruit to make a complete meal. Perfect for breakfast, lunch, or dinner.

21 Day Fix containers: 1 green, 1 red, 1/2 blue, 1 teaspoon
