Maple Roasted Radishes

 What happens when you mix radishes and maple syrup????? Simply put - a unique, delicious party in your mouth! Roasting is my secret weapon when preparing a healthy, flavorful meal - especially with this recipe. The roasting takes the "bite" off the radish and replaces it with a subtle nuttiness which will amaze you.

My sweet summer neighbor picked me up this local syrup. In true New Hampshire style, you go to the farmhouse - enter in the front door, ring a bell and someone comes and helps you buy the syrup. A bit pricey, but so worth it!

Mmmmm - look at that caramelization! Sooo delicious!

And here I'm trying to take photos of this gorgeous meal when my son is already grabbing for a taste!

Maple Roasted Radishes

one large bunch fresh radishes, stems removed and cut in half
2 tablespoons real maple syrup
2 teaspoons olive oil
salt and pepper to taste

Preheat oven to 425 degrees

Toss radishes with remaining ingredients and then spread evenly in single layer on a large baking sheet. Roast for 20-25 minutes until lightly browned and tender.

These are amazing fresh out of the oven or as leftovers on a salad, so you might want to double the recipe. Don't forget to whip up a batch of Honey Balsamic Dressing !
