Easy Breakfast Scramble

Its been a busy week in the Fresh Mama house! We are back from the lake + jumping right into school + activities. I don't know about you, but I always feel the new school year is so much more of a transition than the New Year. A perfect time for a fresh start and new habits!

These two were all smiles before riding the bus to school on the first day.



Feeling a bit emotional with the boys off to school again and the realization that summer was over - pressing play on PiYo was just what I needed. My "go-to" workout when I need to work through some emotions and just get my head on straight. It did the trick!



With a major Urge to Purge on the brain - I've been reading The Life-Changing Magic of Tidying Up: The Japanese Art of Decluttering and Organizing. Started putting the magic to work this week and it felt so good!



This guy was all smiles at his first hockey practice.  Love, love, love to watch this kid skate. 


And this recipe has been a staple for my busy mornings! Perfect way to start the day or as a post-workout snack. Enjoy!


Easy Breakfast Scramble

coconut oil spray (or olive oil)
2 eggs
splash of whole milk
handful of baby spinach
sprinkle of sharp cheddar cheese, grated (1 tablespoon)
salt + pepper to taste
siracha (optional)

1. Spray the bottom of a skillet with coconut oil and heat on medium heat.
2. Break eggs in mixing bowl and add a splash of milk.
3. Whisk eggs and milk together.
4. When pan is heated, pour egg/milk mixture into pan and immediately add spinach to egg mixture.
5. Cook for one minute, then sprinkle with cheddar and continue to stir until cooked to your liking (I prefer mine a little undercooked)
6. Season with salt and pepper and drizzle with siracha if desired.

Serve with fruit or whole grain toast for a full meal!
