Crockpot Sweet Potato Chili

Every morning my little guy needs snuggles, reassurances, and a little tough love to get off to school. Transitions are always a tough time for him - especially when it involves new routines and new people. From pre-school where he cried every.single.morning at drop off  to now 2nd grade where every morning he gives me a litany of reasons why he doesn't want/need to go to school ("we don't learn anything anyway and all we do is Math all day...") --- a morning where we can actually get out the door without some drama on his end is rare.

Thankfully I have a few tricks up my sleeve to at least send him off with a lunch he looks forward to each day. The kid loves a good hot meal and often requests pasta or soup for his school lunches. Enter in: the Sweet Potato Chili that has rocked our world and dinner table...this recipe gets an A++++ for simplicity, amazing flavor, and I'm sure it would freeze well --but it never made it that far for us. This may be the first recipe in a loooong time that I actually stuck to the original recipe (well, mostly)!







Sweet Potato Chili

1 medium onion, chopped
3 cloves garlic, pressed or minced
1 red bell pepper, chopped
1 jalapeno pepper, seeds removed and diced fine
1 large sweet potato, peeled and chopped into bite-size cubes
1 pound lean ground chicken or turkey
1 pound lean ground beef
2 tsp paprika
2 tsp chili powder
2 tsp dried oregano
2 tsp sea salt
1 tsp cumin
1/4 tsp red pepper flakes
1 14 oz can petite diced tomatoes
1 cup low sodium, fat-free chicken broth

 Optional toppings:
sour cream
Greek yogurt
cilantro
green onion
avocado
hot sauce!

Place meat in bottom of slow cooker, then layer chopped veggies, followed by spices/seasoning, and finally diced tomatoes and chicken broth, then give it a good stir to break up the meat and combine ingredients. Cover and cook on low for 8 hours. Stir well before serving and top with desired extras!

Boom! Dinner is done! My entire family gobbled this up - dinner for the 4 of us plus a few lunches (there may or may not have been some squabbling over who got the leftovers). I was generous and let the kids and hub have it... The chili is already on the schedule for this week, again. Yup, its just that good and I knew all you busy mamas out there would love it, too!
