Every morning my little guy needs snuggles, reassurances, and a little tough love to get off to school. Transitions are always a tough time for him - especially when it involves new routines and new people.
From pre-school where he cried every.single.morning at drop off to now 2nd grade where every morning he gives me a litany of reasons why he doesn't want/need to go to school ("we don't learn anything anyway and all we do is Math all day...") --- a morning where we can actually get out the door without some drama on his end is rare.
Thankfully I have a few tricks up my sleeve to at least send him off with a lunch he looks forward to each day. The kid loves a good hot meal and often requests pasta or soup for his school lunches.
Enter in: the Sweet Potato Chili that has rocked our world and dinner table...this recipe gets an A++++ for simplicity, amazing flavor, and I'm sure it would freeze well --but it never made it that far for us. This may be the first recipe in a loooong time that I actually stuck to the original recipe (well, mostly)!
