3 Simple Summer Staples

Hey Mamas - have you hit a Farmer's Market or do you get CSA delivery? If not - put a trip to the Farmer's Market on your to-do list for the weekend! Here in New England, the tomatoes are finally in season - the corn is ripe - and the zucchini is rolling in.  With gorgeous weather to enjoy - who wants to be a slave in the kitchen? Not this mama! I thought you might enjoy a few of my favorite simple summer recipes.

Grilled Corn

Looking to up your corn game? Add a twist by throwing it on the grill with these simple instructions:

1. Pull back husk and remove all cornsilk completely
2. Place husk back over ear of corn
3. Place ears in a large bowl and fill with water until completely submerged
4. Soak for 10 minutes (it has also been suggested to salt the water prior to this step, but I didn't bother)
5. While corn is soaking, heat grill to med-high heat
6. Once soaking is complete, place corn on grill and grill for 15-20 minutes until tender and thoroughly cooked.
7. Top with butter or Herbed Butter

Although we had eaten grilled corn, we had never made it ourselves (the hub actually grilled it, so I can't take the credit) - it was so easy and the kids loved it!!!


Caprese Salad

2 large ripe local tomatoes
8-12 oz fresh mozzarella
handful fresh basil leaves
drizzle of balsamic vinegar
drizzle of olive oil
salt and pepper to taste

1. slice tomatoes thinly and place on large platter
2. Slice mozzarella and place one slice on each tomato slice
3. Gently tear basil leaves into small pieces and top mozzarella
4. Sprinkle with salt and pepper to taste
5. Drizzle with balsamic and olive oil

I'm not exaggerating - we have this 4-5 times a week. Literally my oldest's favorite food and I'm not sure we will ever get enough of it. Nothing like Caprese Salad with fresh, local tomatoes - so easy, elegant, and a crowd-pleaser. If you have never tried it, make it a priority to get this on your menu ASAP!


Fresh Tomato and Avocado Salad

2 ripe tomatoes
1 ripe avocado
1 lemon
Salt and pepper to taste

1. Chop the tomato and avocado
2. Squeeze juice from half the lemon over the tomato and avocado
3. Season with salt and pepper

Simple, healthy - full of flavor. NomNomNom!
