Citrus Steak Stir Fry Lettuce Wraps and What is a Challenge Group??

I've been meaning to get these beauties on the blog for a few weeks - cannot wait to make them again, especially now that the weather is warming up!  I created these the first week I started 21 Day Fix Extreme with my challengers. We had the most amazing Challenge Group for the month of March - major pounds lost, new wardrobes being purchased for the summer! Whoop! I gotta say- I was sooo ready for this program and so excited this recipe works perfectly with the nutrition plan. The citrus marinade makes for a light and fresh flavor and of course - do not forget the hot sauce and avocado! Yum - a party in your mouth!

I get so many of the same questions - I finally decided to answer them all here! So here you go, the answers to all your Frequently Asked Questions regarding my online fitness/nutrition support groups:

Q: Where do I workout? Do I meet you and take classes?
A: Here is why I fell in love with these programs! No rushing to get to a class, no hoping you get your favorite spot - where do you workout?? In the comfort of your own home! I personally workout in either my basement or the kid's playroom. All you need is equipment for your program, a TV, a DVD player, or now, you can also stream all your workouts directly through your computer with Beachbody On-Demand! I have been using this feature since February and absolutely love it. Workouts at your fingertips, on any wi-fi device, no DVDs required. 

Q: How do I know what program to choose?
A: Easy - I work closely with all my clients before they join a group to make sure we choose the best fitness/nutrition plan for their needs and current fitness level. No matter what your fitness level and nutrition needs are, we can find a program that will work for YOU.

Q: Is it pre-packaged processed food? Or do I cook my own food?
A: My programs are all based on REAL food nutrition + a daily meal replacement with Shakeology. I provide my clients with sample meal plans, shopping lists, and of course recipes! In the groups we focus on doing what works best for for you and your family. Some of us meal prep on the weekends for a week of healthy eating, others cook each day. Bottom line, you learn how to be prepared, quit the drive-thru and cook meals your whole family will enjoy!

Q: I have a lot of weight to lose - can I do more than one group?
A: Yes! I have many clients who have gone on to lose 30+ pounds - and even have a special support group for women with some big goals. This isn't about a quick fix, this is about long-term lifestyle change. 

Q: I have diabetes, high-blood pressure, high cholesterol - can your program help me?
A: Yes - as a registered nurse with a background in diabetes education, I am comfortable helping you with your meal plan and taking control of your health. I have clients who have been able to avoid going on oral diabetes medications, simply by following the 21 Day Fix nutrition plan and drinking Shakeology daily. In addition, I have had many clients with huge improvements in their cholesterol levels and avoiding medications. When I worked in the hospital I was treating the disease - as a fitness coach I am helping with prevention. Cannot tell you what am amazing feeling that is - to know these programs are helping people save money on healthy care costs, both in the short term and long term.

Q: Where is the online support group? 
A: All my groups are in private Facebook groups. This means only the members of the group even know you are in the group. All posts and images are completely private to the group. So don't worry, you won't be blowing up your Facebook feed with sweaty workout pics!

Q: I don't have Facebook - can you still help me?
A: Yes - I have had a couple clients join Facebook specifically for the group - OR we can check in via email or text message!

Q: I'm nursing my baby - can I join your group?
A: Yes! As a former labor and delivery/post-partum nurse, I can help you - baby always comes first, but that doesn't mean you can't work on your fitness and nutrition. Be healthy for yourself and your family!

Q: How much does it cost?
A: Each program varies in cost and we choose the best program to suite your needs, then go from there.  Of course budget is always taken into consideration. Keep in mind that investing in your health now is going to pay off in the long-term. As a nurse, I know how expensive just one night in the hospital can be - so invest in your health now and avoid health care costs down the road. My main objective is to help you become the healthiest version of YOU. I also run FREE groups approximately once/month for 5-14 days focusing on nutrition or a specific fitness routine. My complete fitness/nutrition programs run for 3-4 weeks depending on which program you choose.

Q: I'm on vacation during this month's group - can I join next month?
A: Yes - my team runs 2 groups/month - we will find a start date that works for you!

Q: How much weight can I expect to lose during the group:
A: Weight loss depends on many things and we do not use the scale as the primary method of measuring progress. Before/After photos, measurements and of course zipping up those jeans hanging in the back of your closet are the real measure of progress. The average weight loss in my 3 week group is 4-12 pounds depending on an individual's goals.

Steak Stir-Fry Lettuce Wraps

1 pound flank steak or top sirloin
juice of 1 orange
juice of 1 lime
juice of 1lemon
1-2 cloves garlic, minced (just depends if you like it spicy)
handful of fresh cilantro
3/4 tsp kosher salt
1/4 tsp pepper

1 red bell pepper, sliced into strips
6 oz. cremini mushrooms (or baby bellas) sliced thin
1 cup snow peas
1 tablespoon olive oil
1 avocado, cubed
hot sauce (optional)

1. Mix marinade ingredients in a small bowl, place steak and marinade into a ziplock bag and marinate 12-24 hours.
2. Remove marinated steak from fridge and place in broiling sheet, reserving marinating liquid, allow to come to room temperature, then broil on high 5-6 minutes on each side, until medium well. Allow to rest on the counter for 5-10 minutes while you cook the veggies.
3. Heat a large skillet on med-high with oil. Add peppers and mushrooms to the pan, cook 4-6 minutes until browned on the outside, then add snow peas and continue to cook an additional 2-3 minutes. Add reserved marinade to veggie in the pan until it bubbles and thickens.
4. Slice steak thinly, add to skillet and toss everything together.
5. Wash and dry lettuce leaves, fill with a spoonful of the stir-fry, top with avocado and hot sauce. Enjoy!!!
