Monday: Maple Roasted Salmon, quinoa, broccoli, salad
Tuesday: Parmesan Chicken Tenders, baked sweet potato, salad
Wednesday: Leftovers (here's hoping we have some!)
Thursday: Lemon-Dill Baked Cod, roasted root vegetables
Friday: Crockpot Tiki Masala, jasmine rice, broccoli
Saturday: Dinner out!
So there you have it - next week's dinner menu! Of course I will be meal prepping lunches, making healthy snacks and of lunches for the kids. It never ends, but I love it!
Now if you are wondering what my workout plan is - I have a little something different planned...After finishing up my first round of 21 Day Fix Extreme... Love, love, love this program!!! Yup - down to a weight I haven't seen since high school (I may have done a crazy happy dance when I saw that number on the scale!)- plus I just feel so dang strong! Starting Round 2 with my Challengers on April 6th.

However, this week I will be sampling and making my own little bootcamp out of all the awesome workouts available on Beachbody On-Demand. This means all the P90x series, Insanity, TurboFire, Body Beast, Brazil Butt Lift (hehe), plus more and you can even sample some brand new workout programs like 21 Day Fix (regular and Extreme) and PiYo. Pretty awesome and I've been so excited to make my own little bootcamp from all the awesome workouts!
