Gluten-Free Oat Chocolate Chip Cookies

Chances are you have a friend or family member who has gone gluten-free... These days it seems to be all the rage, but honestly, even if you are not gluten-free you will want to make these (well, as long as you are ok with tree nuts)! Note: You will want to have parchment paper to line your baking sheet.

I personally, limit my wheat/gluten intake. About a year ago a friend called me to ask advice (yup, when you're a nurse, this is a frequent occurrence, lol!). She was experiencing some symptoms and wondered if she might have a gluten allergy. Well, after researching on her behalf, I realized I probably had a sensitivity. My whole life I have experienced a stomach ache after eating pasta, chronic eczema, and at that time had recently started to experience joint pain and swelling in my hands in the morning after eating spaghetti or pizza. Lightbulb moment! I have a gluten sensitivity! So, I cut out gluten for 2 weeks, felt great, my eczema cleared up, plus I just felt more energized and healthy. As a result, I now severely limit my gluten intake. I came across these cookies on Pinterest and knew I had to give them a try. I mean almond butter + chocolate? Yes, please!

Gluten-Free Oat Chocolate Chip Cookies

Preheat oven to 350 degrees

1/2 cup rolled oats
1/2 cup almond butter (mixed well)
1/4 cup REAL maple syrup
1 Tbspn flax meal
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/3 cup chocolate chips

Mix all ingredients thoroughly except chocolate chips in stand or hand-held mixer. Add chocolate chips and stir by hand until evenly distributed.

Drop in tablespoons onto baking sheet lined with parchment paper. Press lightly on top with a spoon to flatten. Bake 11-13 minutes until lightly browned. Allow to cool before removing from baking sheet. Enjoy!
