Clean Eating Sausage and Potatoes
1 pound spicy (or sweet) chicken sausage, cut into bite size pieces
3 medium potatoes (organic is best), peeled and cut into bite size pieces
2 shallots or 1/2 a red onion chopped
2 teaspoons Homemade Taco Seasoning
2 teaspoons olive oil
Preheat oven to 425 degrees
1. Place sausage, onions, and shallots on a large baking sheet.
2. Sprinkle with taco seasoning.
3. Add olive oil and toss to coat evenly.
4. Roast 20-25 minutes, tossing every 10 minutes until potatoes are tender and sausage is cooked through.
Serve with steamed broccoli for a complete meal! To be honest, I need to start making a double batch. One batch just barely cut it this time - the boys had 3 servings each and we had no leftovers. Waaaahhhhh!
