Clean Eating Tasty Turkey Burgers

'Tis the Season for candy, cookie swaps, parties, Champagne, and overindulgence of all kinds. I don't know about you, but this is the time of year I struggle most with staying on track with my meals and snacks. 

So, I did what all normal people do and decided to start a new fitness program, hahahaha! Yup - on Monday I kicked off Hammer and Chisel with my coaches and challengers. A seriously awesome workout program and nutrition plan - (I'll post a video below) and wow - the workouts are amazing and just after 4 days, I'm already seeing results. 

You saw the original version of these turkey burgers in my previous post - but I had to clean them up a bit to work with the Hammer and Chisel nutrition plan. The whole family loved them - kids had them on buns and the hub and I went for naked burgers (wink, wink)! Tons of flavor and the added ingredients keeps the extra lean turkey from drying out - yum, yum!

Holiday Survival Meal Plan

Yikes!!! This has been a craaaaazy few weeks - not only is it the holiday season, but our family has multiple family birthdays in December (including my own:)  + my brother has been visiting us from Sweden- so an abundance of distractions makes meal planning all the more important. This week you'll find a couple recipes to try - the burgers are "tried and true" in our house and the Chicken Caprese looks like a slam dunk!

This cutie turned 8 the other day and was thrilled with his electric scooter - yup, jammies + boots on a rainy December morning - that's how he rolls! He's been outside zipping around at every chance he gets and surprisingly generous, allowing his big brother to use it as well.

Siracha Salted Acorn Squash

You might think fall in New England means an end to seasonal, fresh produce - but honestly, its my favorite season for CSA deliveries. This box of gorgeous bounty comes to my house each week - just look at all those colors!

This week we are enjoying kale, radishes, tomatoes, green leaf lettuce, apples, parsley, sweet potatoes, cabbage, eggs and of course acorn squash!

Portabello + Goat Cheese Omelet {21 Day Fix Approved}

Ah - eggs! In our house we go through about 2 dozen/week...from my hub's hard-boiled eggs on-the-go, or my 7 year old that starts almost every day with 3 fried eggs, or my 9 year old who loves them scrambled, plus my own obsession with eggs as a post-workout snack.  Seriously - what's not to love about eggs?

We get them delivered from a local farm with our CSA box each week - nothing like farm fresh eggs! Ok, so about this omelet - the recipe comes from the official 21 Day Fix cookbook "Fixate" by Autumn Calbrese. Love, love, love, this cookbook - all tasty, simple meals, totally up my alley! My photo might not be perfect like the one in the cookbook, but take my word for it - the flavors are delicious. I actually was too lazy to make the omelet a few times, so just did a scramble instead. This was my prettiest, blog-worthy concoction...

5 Tips for Hiking with Kids (and Banana Oat Blender Pancakes!)

Fall in New England - the season is just beginning and in my opinion - there is no better time to hit the trails with your family. Whether you want to go on a simple walk through the woods or aim high and go for the summit - being prepared increases your chances of having happy hikers and making this a regular activity for your family! 

Maple Roasted Radishes

 What happens when you mix radishes and maple syrup????? Simply put - a unique, delicious party in your mouth! Roasting is my secret weapon when preparing a healthy, flavorful meal - especially with this recipe. The roasting takes the "bite" off the radish and replaces it with a subtle nuttiness which will amaze you.

Crockpot Sweet Potato Chili

Every morning my little guy needs snuggles, reassurances, and a little tough love to get off to school. Transitions are always a tough time for him - especially when it involves new routines and new people. From pre-school where he cried every.single.morning at drop off  to now 2nd grade where every morning he gives me a litany of reasons why he doesn't want/need to go to school ("we don't learn anything anyway and all we do is Math all day...") --- a morning where we can actually get out the door without some drama on his end is rare.

Thankfully I have a few tricks up my sleeve to at least send him off with a lunch he looks forward to each day. The kid loves a good hot meal and often requests pasta or soup for his school lunches. Enter in: the Sweet Potato Chili that has rocked our world and dinner table...this recipe gets an A++++ for simplicity, amazing flavor, and I'm sure it would freeze well --but it never made it that far for us. This may be the first recipe in a loooong time that I actually stuck to the original recipe (well, mostly)!

Gluten-Free Apple Muffins

Baking + gluten-free can be tricky - so when I come across an easy + delicious gluten-free baked treat, you can believe I am going to share it here. Nothing fussy or weird here, just straight forward ingredients and a muffin enjoyed by my entire family. I try not impose my gluten-freeism (is that a word?) - on them, but they didn't even notice!

I don't know about you, but locking myself in my house with clean eats really doesn't sound like a fun way to spend the summer, so instead - take charge of the menu and bring a healthy dish to share with the crowd!

Here are my 5 Favorite dishes for cookouts and parties - if you have never made quinoa, I command you to make the quinoa salad! Packed full of protein, tangy and sweet - plus chock full of superfood. Berrylicious Overnight Oats

Ok guys - so I know the word "obsessed" is used obsessively these days (hehe), but I have to say that is exactly how I feel about these overnight oats. To be honest, I had written off overnight oats a long time ago - although I love oatmeal, the recipes for overnight oats were often chewy, bland and I just plain didn't like it. I've been running my FREE Eating Groups with my coaching-partner Laura for months and she always shares a recipe for overnight oats. Everyone raves about them, and I think, ugh - not.for.me.

Ok, this week I finally gave them a try - holy, sweet, mother of God. It is like having dessert for breakfast! A deliciously sweet (yup, I have a huge sweet tooth) healthy breakfast. The texture is perfect  and feel free to change up the fruit or type of milk, but this is what works for me!

Roasted Carrots and Zucchini with Feta and Dill

Fresh Mama confession - carrots, not my favorite. Raw I can do, but cooked I always found mushy and tasteless. It wasn't until I discovered roasted carrots that the tides turned and now roasted carrots are regular part of my meal plan. This was inspired by a recipe I saw flipping through Pinterest and da-ding! All the ingredients were in my fridge. I tweaked it to suite my taste and dang, so yummy!

Peek into my Week

Hi guys! Happy Friday - It was April vacation in our neck of the woods, so I know many of you enjoyed this past week in fun, tropical locations - hopefully you are still soaking up the sun! The short version of my week, is that there isn't a whole lot to share (but do read through - because I have a yummy recipe for you!) - because we didn't do much - our Stay-cation turned into a Sick-ation with both my boys coming down with an awful tummy bug. First Colin was hit the end of last week, we had a day where everyone was ok, then Ev got hit - so much for Stay-cation plans! The original plan was to head up to NH for a day or night, hit the Lego Discovery Center in Boston, and hiking in Purgatory Chasm - but we didn't end up going anywhere! That's ok, I'm just glad no big plans were put on hold due to the cooties floating around here.

Here's Miss Jade, doing what she's best at - snuggling and napping with the boys when they don't feel well. She just loves the fluffy Red Sox blanket!

Clean Eating Meal Prep and this Week's Meal Plan

A busy couple hours in the kitchen on Sunday means a fridge full of clean eats for the week. If you are not food prepping - you need to start!! Go ahead and start off small - maybe hard boil some eggs, cut up some fruit and veggies, then move on to some yummy side dishes and lean proteins when you get the hang of it:)

Citrus Steak Stir Fry Lettuce Wraps and What is a Challenge Group??

I've been meaning to get these beauties on the blog for a few weeks - cannot wait to make them again, especially now that the weather is warming up!  I created these the first week I started 21 Day Fix Extreme with my challengers. We had the most amazing Challenge Group for the month of March - major pounds lost, new wardrobes being purchased for the summer! Whoop! Want to learn more about how to become a challenger in one of my online support groups??? Keep reading!

I gotta say- I was sooo ready for this program and so excited this recipe works perfectly with the nutrition plan. The citrus marinade makes for a light and fresh flavor and of course - do not forget the hot sauce and avocado! Yum - a party in your mouth!

Meal plan of the Week!

Ah, this week I'm breaking out some oldies but goodies! We still have snow on the ground, but I am ready for some light and fresh meals - don't worry the crockpot will still be getting a workout! Plus, I will definitely be making a batch of these Gluten-Free Oat Chocolate Chip Cookies - finishing up my first round of 21 Day Fix Extreme and mama needs a treat!!!

Looking for the perfect breakfast, after-school snack, or pre-game energy booster for your kids??? Well, this smoothie has it all and my kids are asking for it constantly! Meal Plan of the Week and Eeeeek!!! I'm BAAAAA-AAACK!

Hi guys! Super excited to share some recent news and of course this week's meal plan - which has a twist to it...As you all know - the past year+ I headed back into the work force. 3 mornings/week, I headed to the office after dropping my boys off at school. It started off so exciting, working in an office, learning new things, having new responsibilities, but always missing my boys, wishing I was there for them after school and honestly, the more time went on, the more stressful it became. 

So the photo below - taken as Colin came sprinting full speed off the bus to give me the biggest hug in the world on Thursday -  because Wednesday was my last day at the office! The boys were beside themselves -- so glad I captured this moment:)

Orange-Sesame Pork Stir-Fry

Confession - I have been cooking so much these past couple weeks - and loving every minute! After months of constant after school activities and rushing around from 3pm-8pm, we decided to take a break. No activities Monday through Thursday and now only another month of Friday night hockey practice. If you have a crazy schedule and just need a little down time, I highly recommend it! Homework has been getting done without complaint (okay... maybe just a little, but honestly - evenings have been so great). We've had time to play games, snuggle on the couch, watch some shows and just relax! Plus the boys have been helping me make dinner! Baseball season will be on us soon enough - well, that is assuming the bazillion feet of snow melt before July - hahahahaha, so I'm just going to enjoy this next month or so and keep the activities to a minimum.

There are few things I enjoy more than a quick and easy weeknight dinner that takes less than 30 minutes from start to finish and this recipe fits the bill. Veggies + protein + a sweet and tangy sauce = better than take out and so much healthier. This dinner was gobbled up by everyone and luckily I had a little left for lunch leftovers. I think this would be yumm-o with shrimp, too - so that is on the menu text time!

Butterscotch Brownies

I know I always keep it healthy here, but - I just had to share this recipe. It was Valentine's Party time at the kid's school and I wanted to make them a special treat. The thought of running out to the store for ingredients was not appealing - so I perused my Pinterest boards in hopes of finding a recipe with all the ingredients in house. I came across this - pinned many moons ago. Blondies? What's not to like! 

Seriously guys, these were sooooooo good and incredibly easy to make. The secret is in the whole wheat flour and making sure to melt the butter with the brown sugar. The whole wheat flour imparts a nutty flavor while melting the butter with the sugar gives it the special butterscotch flavor - yum! I had a bite and was instantly back in time - my Gram (who was an amazing baker) always had "butterscotch brownies" on hand. She kept them in the freezer for unexpected visitors - she was such a great cook/baker, that visitors were frequent and she always fed them well (from scratch of course!).

Clean Eating Sausage and Potatoes

Let me start this blog post with an apology. I am sooo sorry it has taken me this long to put this recipe on the blog - the whole family loves it + it is super easy + its is super healthy. This is a "go-to" meal when time is tight and you need to get dinner on the table in 30 minutes. Nothing better than a family meal that also fits in with my Insanity Max 30 meal plan! I use my 21 Day Fix containers for my portions and bam - staying on track with a happy dinner table. Sausage + potatoes means you cannot go wrong!

Gluten-Free Oat Chocolate Chip Cookies

Chances are you have a friend or family member who has gone gluten-free... These days it seems to be all the rage, but honestly, even if you are not gluten-free you will want to make these (well, as long as you are ok with tree nuts)! Note: You will want to have parchment paper to line your baking sheet.

Crockpot Turkey Tiki Masala (21 Day Fix Approved)

Nothing like cold weather to inspire some crockpot cooking! My whole family adores this dinner and it has become a regular in our house, so of course I knew it had to go up on the blog.  I was originally introduced to this recipe when my partner and I co-hosted a Crockpot Challenge group in December, this was by far, my favorite recipe and is a regular in the rotation, now. This was the perfect Sunday dinner could not be easier and the whole house smelled sooo good while it was cooking! A few hours after the crockpot got going, the kids come running into the kitchen "Mom, what's for dinner? Its smells sooo good!". Ah, that always brings a smile to my face - The best part about this dinner? It is so darn healthy and 21 Day Fix approved!

Meal Plan of the Week and Roasted Veggie Greek Salad

I'm hearing you guys miss my meal plans!!! You know what??? Me toooo!!! So this week, I am back on it, plus I have a super yummy recipe for you. We've been digging out from under 4 feet of snow in Massachusetts, plus another foot is coming tonight and school is canceled AGAIN. I'm highly considering strapping a plow on the front of my Mom-mobile because there is some major cabin fever going on here!

The up side? I've been spending lots of time in the kitchen and have plenty of recipes to share. Of course, I have some healthy, comfort food choices on the menu this week. My February 21 Day Fix group (nutrition/fitness online accountability group) is under way and I'm sticking to the plan right along side them. Planning is key to staying on track throughout the week, not only for dinners, but all my meals and snacks. So, here are our family friendly 21 Day Fix approved meals for the week!

BLT Quiche

Quiche -- can you think of any other food that is so versatile? Easy, elegant, inexpensive, and perfect for breakfast, lunch or dinner. Truly one of my favorite dishes and this quiche has been gracing my repertoire for years. I honestly don't even remember where I found the inspiration - maybe Cooking Light or the Food Network. I have made this so many times and always with astounding reviews. I mean, what's not to love??? Bacon (yes, please!), Leeks, and of course tomaotoes - and don't forget the cheeeeeeese!!!!!

Stuffed Pepper Soup

Hi everyone - Yes, I know it has been a loooong time since I posted. A couple reasons for that, but first and foremost I'm glad to be back in action! I hope everyone had a wonderful holiday/winter break. My boys headed back to school today, somewhat reluctantly, but not gonna lie - I was looking forward to a day to make a dent in my to-do list without distractions. 

I spent most of Sunday in my kitchen and this soup was on the menu. Unfortunately I have a couple friends going through some health issues right now, so of course I wanted to make them some meals. Some people are good at helping with childcare or rides, etc., but obviously food is where I try to make a difference. Nothing like having a fridge full of healthy, yummy food and this soup fits the bill. Fresh bell peppers, brown rice, lean ground beef and spices = a hearty mouthful of yumminess! Perfect for this arctic weather we are experiencing here in New England. I doubled the recipe for you guys - this freezes great and it is a recipe the whole family will love, so you might as well save time and make a big batch! 

Before we get to the recipe, I wanted to share a few changes you will see around here... First, I haven't blogged in ages.  A couple reasons: 1. My old laptop had one foot in the grave and did not like it when I blogged, so thankfully my birthday falls 3 days after Christmas and the hub bought me a new MacBook Air (I'm in love!). I'm still getting used to it, but obviously I'm back in business! 2. I have been focusing on growing my fitness business. For those of you that do not know - 7 months ago I decided to take the leap and become a fitness coach! This has been an amazing journey and I will be sharing more about that on here. 

You will still find the same great recipes (well, I hope you think they're great;), PLUS I will be adding fitness related posts. Food is and always will be my first love and I am so excited to start sharing even more healthy lifestyle tips. Being a Fresh Mama is more than just eating healthy - gotta move those bodies, too!
