Caprese Flatbreads
4 premade 6-inch flatbreads
1/2 cup premade pesto
3 medium tomatoes, sliced thin
8 oz. fresh mozzarella
balsamic glaze (found in the condiment aisle)
1. Turn oven on broil and move oven rack to the top shelf.
2. Place flatbreads on large baking sheet and spread 1-2 tablespoons pesto evenly on each flatbread.
3. Place 3 tomato slices on top of the pesto.
4. Place 3 thin slices of mozzarella on top of tomatoes.
5. Place flatbreads under broiler for 4-6 minutes until tops are nicely browned.
6. Remove from oven and drizzle with balsamic glaze.
Seriously, could not be any easier!!! My whole family enjoyed them, I served with a side salad and done in less than ten minutes. That is quicker than drive-thru!
