Meal Plan of the Week and a Giveaway!!!

Hey guys!!! After a very busy weekend, I am finally taking a minute to sit and write the meal plan for you...I also have a fun Giveaway with Leaf and Love Organic Lemonade, so make sure to enter! Apparently the boys had so much fun helping with the meal plan last week, they wanted to each pick a meal for this week. Colin asked for chili (again) and Evan asked for homemade pizza, so I made sure to include their choices.


Sunday: Parmesan Crusted Tilapia, Maple Roasted Sweet Potatoes and Turnips, steamed green beans (pictured above)
Parmesan Crusted Tilapia
8 Tilapia filets
1 cup grated Parmesan cheese
1 tablespoon dried Thyme (parsley or basil would also work)
1/2 teaspoon fresh ground pepper
olive oil spray
1. Preheat oven to 425 degrees and spray your largest baking sheet with olive oil
2. Mix Parmesan cheese, thyme, and pepper in a baking dish
3. Dredge tilapia completely in cheese mixture
4. Place on baking sheet in middle of oven
5. Bake 10 minutes, then increase heat to BROIL
6. Broil for 2-3 minutes until fish is lightly browned

Monday: Easy Crockpot Chili

Tuesday: Crockpot Chicken Tacos, brown rice, salad

Wednesday: Leftovers

Thursday: Ground Pork-Kale Stuffed Acorn Squash

Friday: Homemade Pizza

Saturday: Eating Out!

I hope you found some inspiration here! The tilapia recipe was sooo yummy and I made a huge amount, perfect for weekday lunches. I'm already looking forward to lunch this week -- yum, yum, yum!

Ok, now on to the Giveaway, seriously, who doesn't love trying something new for FREE?! Especially when that something is organic and sugar-free?! Yup, these boys certainly enjoyed the lemonade! and mom enjoyed that it was organic and sugar-free, Win/Win in my book!

I came across Leaf & Love via Instagram -- I was immediately intrigued, it is tough finding truly organic lemonade out there, that tastes good! I should probably back up a bit here -- my kids love lemonade -- they probably inherited their love of lemon from me. I pretty much haven't met a lemon flavored recipe I don't like. But, I don't make it or buy it often, because most lemonades just have way too much added sugar. So, to find a lemonade with zero sugar! Yup, let's give that a try! Here the boys are --- enjoying their first sips of Leaf & Love !
