Swiss Chard Mango Salad with Pear Vinaigrette

These days you can find pears year-round, but nothing beats the flavor of fresh in-season pears. My kids fight over who gets the pears from our CSA box because they are so sweet and flavorful! Usually pears don't last long enough to make it into any recipes, but I grabbed a couple little ones and reserved them for this recipe. A truly delightful dressing for any salad! So if you are looking for something a little different than the standard vinaigrette and have some tasty pears, give this a try.



 
 
 
Swiss Chard Mango Salad with Pear Vinaigrette
 
4 cups swiss chard, sliced in thin ribbons
1 ripe mango, cut into bite-size pieces
1 ripe avocado, cut into bite size pieces
1/4 cup dried cranberries
2 tablespoons sunflower seeds
2 small or 1 large ripe pear, peeled and cut into 1 inch pieces
1 tablespoon honey
1 teaspoon Dijon mustard
juice from one lemon
1/4 cup rice wine vinegar
3/4 teaspoon kosher salt
1/2 teaspoon pepper
1/4 cup olive oil
1/4 cup vegetable oil
 
1. Place swiss chard on a large platter, then top with mango and avocado. Sprinkle with cranberries and sunflower seeds.
2. Place pears, honey, mustard, vinegar, lemon juice, salt, pepper, olive oil, and vegetable oil in a blender and mix thoroughly. Drizzle over salad and enjoy! Stays fresh in fridge for up to 1 week.
