Healthy Banana Cookies

Clean eating cookies -- kind of an oxymoron if you ask me, but you may have seen similar cookie recipes floating around on Pinterest. So I just decided to call them Healthy Cookies, because they are! It took me a long time to make these, because I have been rather let down by some of the banana based desserts, like "banana ice cream"... I have some friends that love it, but nope, didn't fool me and in fact I don't like it at all. But that's just me and I do love bananas, so maybe its just that I can't get past the fact that it isn't really ice cream! Any how, I finally made these a few months ago and my 6 year old went crazy for them. Basically, he ate the whole batch single handedly in 2 days.
 

 


Now flash forward a couple months and he is in what I believe child psychologists like to call a "negative phase". So long story short he hates everything! Yup, the kid is literally spitting out 90% of the food I make, things he has loved forever and new recipes I''m trying. The kid complains about breakfast, lunch, dinner, snacks, you name it, he doesn't want it. Driving me absolutely crazy! He has always been the picky one between the two, but for real, I'm about to lose my mind with it. So, if you have any advice on dealing with a "negative phase" --  I'm all ears! Right now my coping strategy is just telling him, "that's fine, but its what's for {breakfast, lunch, dinner, whatever}... so if you don't want it, find something else to eat." I'm trying not to make a big deal out of it, but ayayayayay, that kid tries my patience!
 
So how does this relate to these cookies??? Well, as I said, he gobbled them up last time I made them, and well, this time he went straight to the trash can and spit them out declaring them "DISGUSTING"! I watched with a sinking feeling, because I had been so excited to have them ready for him after school and here he was treating them as if they were made of poison....Grrrrr -- sometimes being a mom mean sucking up your own pride and emotion. Not always easy, but better than the alternative of losing your freaking mind, because it makes zero sense why they change their minds at the drop of a hat! Why do they do that??!!!
 
So, despite his clearly biased critique on this particular batch, I encourage you to give them a try -- they take just a few minutes to whip up and you have a healthy snack for yourself or your "positive phase" kiddos. Feel free to change up the "add-ins". You can try coconut flakes, dried cranberries, white chocolate chips, nuts, anything you like.
 

 
 
Healthy Banana Cookies
 
2 ripe bananas, smashed
2 tablespoons peanut butter (or nut butter of your choice)
2 tablespoons ground flax seed
1/4 cup chocolate chunks
2 tablespoons raisins
1 cup rolled oats
 
1. Preheat oven to 350 degrees,
2. Spray baking sheet with coconut oil or other cooking spray.
3. Place in rounded spoonfuls on sheet, then flatten slightly with bottom of spoon.
4. Bake 15-18 minutes until lightly browned and cooked through.
 
Store in refrigerator for up to 4 days, or freeze. Makes 12 -2 inch cookies.
