Zesty Cucumber Salad

Went to write this post and realized it has been a week since I last posted a recipe! Things have been very hectic around here recently, but I have been cooking up a storm with all the gorgeous produce and I promise more recipes are coming, it just might take while. The hardest part about blogging is finding the time to write up the posts! I wish I could send you all my recipes via mental telepathy, that would make things a whole lot easier. LOL!

I really wanted to share this recipe while the local cucumbers are so fresh and crispy -- I have been making it for years! Tyler Florence used to have a show called "Food 911" where he went to people's homes and helped them prepare a healthy, delicious meals in under 30 minutes. Umm, totally my kind of show! I hope the blog does this in a way by taking the mystery out of cooking healthy and showing people how easy it really is to throw together a healthy meal.


 
Zesty Cucumber Salad
 
2 large cucumbers, peeled, seeded, sliced
1/2 jalapeno pepper, minced (or 1/2 teaspoon red pepper flakes)
1 handful mint leaves, chopped
1/2 cup rice vinegar
1 teaspoon white sugar
1/2 teaspoon kosher salt
 
Mix all ingredients in a medium bowl, allow to chill at least one hour before serving.
 
These cucumbers make an excellent side dish for any Asian inspired meal. Crispy, fresh, and a little spicy! If making for little ones, simply leave out the jalapeno. Stays fresh in the fridge for up to 3 days.
