Crockpot Meat Sauce

Looking for a recipe to get you through a busy weeknight and avoid the drive-thru? This is one of my go-to dinners for nights when we have activities and very little time for cooking. The peppers and onions (lots of peppers in my CSA delivery this week!) give it a hearty flavor, but you could add in any extra veggies you have on hand. If you have homemade marinara sauce, use that, but I always keep a backup of store-bought sauce (Trader Joe's Organic Tomato and Basil) in my pantry for nights like this.  

Crockpot Meat Sauce
1 pound lean ground beef (preferably local, pasture raised)
1 bell pepper, chopped
1/2 medium onion, chopped
1 28 oz jar (or 4 cups) marinara sauce
1 pound cooked pasta
1. Brown ground beef in large skillet. (I do this the night before and then refrigerate the browned meat).
2. Place meat in crockpot, add peppers and onions, pour marinara sauce on top and stir.
3. Cook on high for 3 hours, low for 5 hours, or if you have a warm setting on your crockpot, you can simply warm it up for 8 hours. Very versatile, so do what works for your schedule.
*Another time saver... Pre-fill the pasta pot with water and it will be ready to go as soon as you walk in the door. Simply come home, turn on the burner to boil the water and dinner will be ready to go once the pasta is cooked!
Tonight I made kale chips and Caprese salad to serve with the pasta. The whole family loved it and nothing makes me happier than serving up a quick, easy, and delicious dinner made with local, wholesome ingredients!
