Weekend Food Prep

If you follow me on Instagram (@freshmamablog), you know I do a lot of food prep, because I share photos of it pretty frequently. Why meal prep? Well, basically the idea is to get the bulk of the week's food prepared one day during the week, so eating healthy is easy the remainder of the week. I usually do the majority of prep on Sundays or Mondays because that is what works for my schedule, but you can choose whatever day works best for your family. As a busy mom, working part-time, blogging, fitness coaching, and trying to have a social life, I would be lost without my weekly meal prep!

This is such big part of how I plan our meals -- especially lunches and snacks throughout the week. If you have been following me, you know I do my best to plan my dinners ahead of time with my Weekly Meal Plans. In a week or so, I will do an additional blog post to share how I prep for my children's school lunches, but this post will focus on how I prep to keep the hub and I eating clean for the week. Here is a sample of a typical day of clean eating:



In preparing for the week, I take a look at some important factors such as:

Who will be eating breakfasts, lunches, dinners?
Will my husband be traveling for work?
Do we have any invitations/plans for meals with friends and family outside the home?
Will we be hosting any meals for guests at our home?
Do we have any evening activities requiring a dinner with minimal preparation?

Once I get a rough idea of how the week will play out (in this case flexibility is the key to success -- rarely does a week go by when things go exactly as planned!) -- I decide what I'm going to make, then shop for any ingredients I don't have on hand. I rarely have to buy many vegetables, because my CSA delivery takes care of that! The one thing you should be prepared for when prepping is that you will be eating many of the same foods throughout the week. I assure you, all my recipes are delicious and you will NOT be bored! Of course you can change it up each week to prevent monotony -- I certainly do!

How to prep:

1. Wash and chop fruit such as: strawberries, melon, pineapple, watermelon, blueberries, kiwi fruit, and mango. You may even want to mix up a fun fruit salad! Store in mason jars, Tupperware, or glass containers. You can portion out and store in single serving portions or in larger containers and remove as needed.


2. Do the same with some veggies such as: cucumbers, carrots, bell peppers, and cherry tomatoes.

3. Make a batch of lean proteins. Our favorites are:  Sweet Potato Taco Bowl, Balsamic Marinated Chicken, and Lemon Greek Grilled Chicken.

4. Steam or roast some veggies such as: Lemon Pepper Roasted Asparagus, broccoli, edamame,  zucchini, or Maple Roasted Root Vegetables, I like to make extra sweet potato from the sweet potato taco bowl recipe and have that on hand as well.



5. Stock up on some cottage cheese, Greek yogurt, and cheese sticks.

6. Make sure to have some nut butters on hand like peanut butter, almond butter, or nut-free sunflower butter, plus hummus, or other bean dip, and avocado.

7. Prep some lettuce and/or some Mason Jar Salads

8. Hard boil some eggs (I usually make 8-12 hardboiled eggs/week, since we all eat them).

9. I have one Shakeology shake per day, usually as a meal replacement for breakfast or after my workout. It is so easy to blend up a shake quickly, pour it in a to-go bottle and head off to work or errands. Especially when wrangling my monkeys and getting them where they need to be!

10. Plan an easy dinner such as: Lemon-Dill Baked Salmon and mix and match your prepared side dishes. I always keep frozen veggies on hand as a quick side dish!

I have been following the 21 Day Fix Meal Plan, which provides portion controlled containers and set amount of servings from each food group per day. Between getting food prep done and using the containers, eating clean throughout the week usually goes smoothly!
