Tomato and Goat Cheese Salad

Hello, my name is Lil and I love tomatoes. Seriously, if there was a Tomatoes Anonymous, I would be President, I love them raw, I love them plain, I love them with a splash of salad dressing, I love them roasted, I love them in sauces, and salads, and... well, you get the picture! I love them -- so expect lots and lots of tomato recipes here this summer. My boys have inherited the tomato-lover gene and this is one of their favorite ways to eat them. Of course, you can do the standard mozzarella caprese salad, which we do plenty often, but using the goat cheese gives it a unique and earthy flavor. Plus it is so easy to find local goat cheese in New England!



 
Tomato and Goat Cheese Salad
 
1 large, ripe tomato, sliced thin
2 tablespoons crumbled goat cheese
1/4 cup basil, sliced into ribbons
1 tablespoon balsamic vinegar
1 teaspoon olive oil
salt and pepper to taste
 
Layer tomatoes, then sprinkle with the cheese, top with basil. Drizzle with balsamic, then olive oil, season with salt and pepper as desired. Enjoy immediately!
 
This makes a perfect starter or appetizer, so impress your guests or bring it to the next potluck (just make a big platter;). Let summer's bright flavors shine through by using local ingredients and the finest balsamic vinegar and olive oil you can get your hands on!
