Gluten-Free Blueberry Crisp

Today we enjoyed one of summer's greatest gifts -- farm fresh berry picking! We went with my friend (and Fresh Mama), Jen and her kids. Such a blast picking (and eating) our way through the blueberry bushes which were bursting with ripe berries. Sweet, tart, juicy, oh my -- they were amazing and we filled our buckets quickly.


 
 





 
I got home and had pounds AND pounds of blueberries, what to do with all those blueberries??? Well, start off with a crisp of course! I wanted to make it gluten-free, so I changed up a traditional recipe and it came out sooo delicious. The almond meal gives it a delicious crunch and flavor, slightly different from regular crisp topping. So if you have thought about trying to bake gluten-free, definitely give this recipe a try. My kids gobbled it up --without any ice cream or whipped cream on top!
 
 
 
Gluten-Free Blueberry Crisp
 
3/4 cup sugar
1 Tablespoon cornstarch (optional)
6 cups fresh blueberries (washed, stems removed)
juice from one lemon
3/4 cup brown sugar
3/4 cup almond flour or meal
1 stick cold, unsalted butter, cubed into 1/2 inches squares
1 1/2 cups rolled oats
1/2 teaspoon cinnamon
cooking spray
 
Preheat oven to 400 degrees
 
1. Mix sugar and cornstarch in a bowl
2. Place blueberries in a large bowl and mix with the sugar/cornstarch, and lemon juice
3. Using a food processor, pulse the brown sugar, almond flour, and cold butter a few times until just mixed (don't worry if it clumps together). If you don't have a food processor, mix with your fingertips until mixtures resemble coarse bread crumbs.
4. Place mixture in large bowl and mix in the oats and cinnamon. I used a wooden spoon, since it does become sticky and clump together.
5. Spray a 9x13 casserole dish with cooking spray (I used coconut oil) and pour blueberries in dish
6. Spoon cobbler topping on top of blueberries and spread out evenly.
7. Place in oven and bake 35-40 minutes until hot and bubbly and top is browned.
