Lemon-Dill Baked Salmon

So, this meal was a surprise hit in our house. My go-to salmon recipe, Maple Roasted Salmon, is always eaten with gusto, but I had fresh dill on hand and wanted to try something a little different... My friend Dawn (you know her as the co-creator of FMCC), made a version of this at a potluck we had for all the Fresh Mamas and it was delicious.

I modified the recipe slightly and let me tell you, it was amazing -- Light and fresh, but full of flavor. With only 3 main ingredients and ready in under 20 minutes, it really could not be more simple. My 7 year old went back for seconds! I served it with sautéed yellow squash and fennel and fresh strawberries/blueberries.

Lemon-Dill Baked Salmon

Preheat oven to 425 degrees

1 1/2 pounds fresh salmon, sliced into 4 equal portions
4 large sprigs fresh dill, trimmed to fit lengthwise on each salmon piece
1 large lemon, sliced in half lengthwise, then slice thinly as pictured
Kosher salt
Fresh cracked pepper
Olive Oil

1. Place salmon portions skin side down on large baking rack (I always use my trusty Pampered Chef baking stoneware.)
2. Sprinkle generously with kosher salt and cracked pepper (I used about 1 teaspoon salt and 1/2 teaspoon pepper total).
3. Place dill lengthwise on each piece of salmon, top with lemon slices, about 4 lemon slices per piece.
4. Drizzle very lightly with olive oil in a zigzag pattern across the top of the lemon pieces.
5. Place in the preheated oven and bake 11-15 minutes until just cooked through.

This is a perfect recipe for getting your kids involved in the kitchen. My 7 year old sliced the lemons for me and both boys helped with the dill and drizzling the olive oil. Let your kids smell the fresh herbs and suck on a lemon (why do they love to do that?!) while you're at it. A true sensory experience. The end product is so pretty, how can they help but try a bite?
