Zucchini Salad

Looking for a light and fresh side dish? Well, this zucchini salad will definitely satisfy that craving. Serve it up with dinner or lunch, or bring as a healthy dish for your next potluck or barbecue. Perfect with grilled chicken or burgers, or even by itself -- this recipe is a burst of summer flavor! It takes minutes to throw together, but make sure not to add the dressing until immediately before serving, or the zucchini will wilt.



 
 
Zucchini Salad
 
2 medium zucchini, peeled and then shaved thinly with a vegetable peeler
1 cup grape tomatoes, halved
1 garlic clove, minced, (or 1/4 cup green onion, minced)
small handful basil leaves, sliced into thin ribbons
2 tablespoons red wine vinegar ( I bet lemon juice would be delicious, also)
1 tablespoon olive oil
Salt and pepper to taste
 
1. Place zucchini, tomatoes, garlic, and basil in a large mixing bowl.
2. Mix vinegar, olive oil in small bowl and pour over vegetable mixture.
3. Toss together and add salt and pepper as desired.
 
See, how easy was that?! I know I am always looking for new ways to use all the fresh tomatoes and zucchini when summer is in full swing. This recipe is not only delicious, but it is so pretty -- You can be sure this will be a regular on my dinner menu!
 
Update: June 1, 2014 So I posted this recipe and Fresh Mama, Karen, had all the ingredients, immediately whipped it up and took a gorgeous photo that I just had to share (I can cook, but the photography is definitely a challenge for me!). Look how she used a spiralizer and a vegetable peeler to add texture and beauty to this dish:

  3. Made this for dinner tonight. It was super easy and fast to make. This salad was delicious. My husband doesn't like zucchini and I made this salad and he ate two servings before I told him what it was!!! Amazing!! I added minces onion and feta cheese. Yummy!!!

    1. That is wonderful! The zucchini ribbons definitely have a texture than cooked zucchini, so I can see why he would love it! and great idea on adding the feta and onion!

  4. Made this for dinner. Super easy and fast. Super yummy. My husband doesn't like zucchini. He ate two helpings before I told him what it was!! Wow!!! I added chopped onions and feta cheese!!! Crazy good!!!
