Gluten-Free Banana Brownies
3/4 cup almond or cashew meal or flour
2 Tablespoon unsweetened cocoa powder
1/2 Teaspoon baking powder
1 ripe banana, mashed
1/4 cup sugar
3 large eggs
1 teaspoon vanilla
1 stick butter, melted
2/3 cup semi-sweet chocolate chips (divided)
Preheat oven to 350 degrees, grease an 8x8 or 9x9 brownie pan
1. Mix nut-flour, cocoa powder, and baking powder in large mixing bowl.
2. Stir mashed banana, sugar, eggs, and vanilla in medium mixing bowl.
3. Melt butter in microwave, then add 1/3 cup chocolate chips to hot butter and stir until melted.
4. Add butter/chocolate chip mixture to banana, sugar and eggs. Stir well, then add to flour and cocoa mixture and stir well.
5. Pour batter into greased brownie pan, sprinkle top with remaining chocolate chips and bake 27-30 minutes until cooked through and toothpick inserted in middle comes out clean.
6. Cool completely in pan before slicing and serving. Store in sealed container on counter for 3 days.
