Creamy Dill Cole Slaw

Looking for the perfect side dish for your Memorial Day cookout? Well, I have it -- this cole slaw can be made up to 2 days ahead of time. You will love the perfect combination of rich-creamy mayo, tangy vinegar and fresh herbs. Go ahead and use this recipe as a basic guide and feel free to change the ingredients to your liking. Although, I really suggest you use dill in this -- sooo fresh and delicious! If you are lucky enough to have a food processor, this recipe comes together in minutes!

Now, I know there are 2 types of people out there: cole slaw lovers and cole slaw haters. I personally am a lover, but my hub is a hater, however, he likes this recipe, so go -ahead and try it -- you might surprise yourself. If you have only tried store-bought cole slaw in the past, try this recipe and see the difference homemade makes. Just fresh, crunchy, fresh, creamy deliciousness -- no chemical aftertaste (blech!). 
Creamy Dill Cole Slaw
1 small head cabbage
1 large or 2 small carrots
1/3 cup chopped green onion
large handful fresh dill, chopped
1/2-3/4 cup real mayo (depending on how creamy you like the dressing)
2 tablespoons honey
1/4 cup cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
*optional variations
-substitute fresh parsley for the dill
-use red or white onion instead of green
-add celery or carrots
-use 1 teaspoon poppy seeds in the dressing
1. Thinly slice the cabbage using the slicing blade on the food processor or a very sharp knife, place in a very large bowl.
2. Grate the carrots via food processor or using a hand grater, add to the bowl with the cabbage.
3. Add chopped onion and dill to the bowl.
4. Using the chopping attachment blend the mayo, honey, vinegar, salt, pepper in the food processor, or whisk in a small bowl.
5. Pour over cabbage mixture and combine thoroughly. Place in fridge, stirring every few hours to make sure veggies are evenly coated.
I have this Cuisinart food processor and absolutely love it! Since my kids help me in the kitchen frequently, I love all the safety features on the Cuisinart. There is no way to get the blade going unless it is being used properly. That being said -- please monitor your kids carefully when using any electric appliances.
