Zucchini Salad

Looking for a light and fresh side dish? Well, this zucchini salad will definitely satisfy that craving. Serve it up with dinner or lunch, or bring as a healthy dish for your next potluck or barbecue. Perfect with grilled chicken or burgers, or even by itself -- this recipe is a burst of summer flavor! It takes minutes to throw together, but make sure not to add the dressing until immediately before serving, or the zucchini will wilt.


Gluten-Free Banana Brownies

So, going gluten-free is all the rage these days. We don't have any medical reasons to go gluten-free in our home, but I am happy to try new recipes, especially when you can substitute wheat with delicious nut flour. I have made this recipe a variety of ways and my kids have loved all of them. You can't really go wrong with brownies!


Creamy Dill Cole Slaw

Looking for the perfect side dish for your Memorial Day cookout? Well, I have it -- this cole slaw can be made up to 2 days ahead of time. You will love the perfect combination of rich-creamy mayo, tangy vinegar and fresh herbs. Go ahead and use this recipe as a basic guide and feel free to change the ingredients to your liking. Although, I really suggest you use dill in this -- sooo fresh and delicious! If you are lucky enough to have a food processor, this recipe comes together in minutes!

FMCC: Mason Jar Salads and Zucchini Carrot Mini-Muffins

Mmmm, cannot wait to share the recipes we made at this week's FMCC! As usual we found inspiration in our CSA boxes from Heavens Harvest Farm. Delicious, healthy, pre-made salads in mason jars and quick, easy mini-muffins packed full of veggies. Mason jar salads have been a staple for my weekly food prep, but this is the first time I have included the dressing in the jar -- I will definitely be making it with the dressing from now on. They came out perfectly and it is a great way to control portions (especially when the dressing is so good you just want to drink it!). These salads are a life-saver during the week -- throw them in a cooler on the way to work, or simply grab out of the fridge for an easy, healthy lunch with no clean-up, add some grilled chicken or steak and you have a complete dinner. Have you tried mason jar salads???  If not, I hope you will give it a go after reading this post!

Sweet Potato Taco Bowls

Mmmm, roasted sweet potatoes, black beans and spices... this is one of my favorite meals and I cannot believe it has taken me this long to post the recipe! You can make a batch early in the week and have a delicious dinner with plenty of leftovers for a few lunches. If you are looking for a Meatless Monday idea, this is the perfect recipe. The flavors are amazing --  the only way my kids will actually eat sweet potato. Top with some Fresh Mama Guacamole and everyone will be happy!

 

Meal Plan Week of 5/4 - 5/10

This week my CSA delivery included a very special item... RAMPS!!! These spicy spring onions, also known as wild leeks, are only available for a few weeks in early spring. They are wild harvested (how much fun would it be to go ramp hunting?!) in the mountains of the Appalachians. If you have never had ramps, I urge you to try them. You can use them in almost any recipe you would use garlic or onions. My plans for the ramps included: ramp pesto, macaroni and cheese with ramps instead of onions, zucchini salad with ramps.
