Meal Plan Week of 3/16-3/22

Happy St. Paddy's Day everyone!!! We started off our week with a traditional corned beef and cabbage boiled dinner -- I only make it once a year, so we had my father-in-law over for dinner and all the boys scarfed it down.



I have to report last week's meal plan ended up being a mere suggestion. My pup wasn't feeling well and I had to rush her to the vet's office Monday night right at dinner time, with the kids in tow. Good times... Then my husband had to travel for work, which kind of threw things off. So basically, last week was good reminder that even the best laid plans sometimes get thrown out the window!

Luckily, my sweet girl is fully recovered, the hub is home and its a new week! So here it is -- this week's plan and I hope I can stick to it!



Sunday: Corned Beef and Cabbage, Amish Bread
*1 4 lb. corned beef brisket with seasoning packet
1/4 cup brown sugar
4 medium carrots, peeled and cut into large pieces
1 onion, cut into 1 inch pieces
4 new potatoes, peeled and quartered
1 small head of cabbage, cut into eighths, lengthwise

1. place beef, brown sugar, and seasoning packet in large pot or cast iron dutch oven, fatty side up
2. fill with water until it just covers top of brisket
3. Bring to a boil and then decrease heat to a low simmer for 2 hours.
4. After 2 hours, add the vegetables and continue to simmer another 1-2 hours until vegetables are cooked through and tender.
5. Place vegetables on platter, thinly slice brisket and place on top.

Monday: Stir-fry, brown rice

Tuesday: spaghetti with meat sauce, salad

Wednesday: Lentil soup

Thursday: Sweet potato taco bowls

Friday: Left overs

Saturday: Salmon, baked potato, veggies, salad
