The Best Oven "Fries"

If you have been following me for a while, you know I love my CSA. It is so exciting to receive our box full of organic veggies, fruits, and eggs! My favorite thing about the "you get what you get and don't get upset" style of CSA --- sometimes you get things you would never see at the grocery store or wouldn't think to buy, even if you did. Now, I have always been an adventurous eater, but would you believe I have never really liked potatoes and rarely buy them at the store. Sure, I ate them on holidays or if someone else was cooking, but they were not a staple in my cooking. Well, my CSA has changed that. Organic, local potatoes are a whole new experience -- full of flavor and a moist, buttery texture! I LOVE them and have enjoyed trying many new recipes including this one. These oven "fries" are fantastic. My boys inhale them and have declared them their favorite French fries,.
 
 


The Best Oven "Fries" (Printable version)
 
Preheat oven to 450 degrees
 
4 medium wax potatoes, peeled and sliced into thin wedges
1 Tablespoon Homemade Taco Seasoning (or store bought)
1 1/2 Tablespoons olive oil
one medium yellow onion chopped (optional)
 
1. Toss potatoes, taco seasoning, onion and olive oil together in large mixing bowl until the potatoes are evenly coated.
2. Place in preheated oven, roast 25-30 minutes, stirring gently every 10-15 minutes until potatoes are browned and crispy.
 
These guys are so flavorful you don't even need ketchup!

    1. Any type of potato that will hold its shape when cooked, russet/baking potatoes are likely to crumble. New potatoes or Yukon Gold are common wax potatoes sold in grocery stores.
