Meal Plan Week of 2/2-2/8

Hi Everyone! Are you guys staying warm? This recent cold snap has me craving comfort foods and you will certainly see it reflected in this week's meal plan! I have to say I am so in love with all the winter vegetables coming in my CSA boxes these past few weeks. Here is a peek at this week's goodies --  perfect ingredients for some soul-warming comfort meals. 



*CSA items in green
Sunday: Mustard Roasted Salmon, rutabaga and potato gratin, salad
 
Monday: Winter Vegetable Soup, fresh bread
*I will roast the vegetables on Sunday and then put the soup together Monday evening
 
Tuesday: Polenta Crusted Quiche, oven baked fries
*I won't be making this exact recipe, but I can't wait to use my CSA corn-meal for polenta quiche!
 
*I will prep the recipe Tuesday night and throw it all in the crockpot Wednesday morning.
 
 
 
Thursday: Spaghetti and Meatballs, salad
 
Friday: Hot dogs, baked beans, cole slaw
*I made a big batch of baked beans last week and froze the leftovers, I will defrost the night before and reheat in the crockpot.
 
Saturday: Dinner out with the family!
