This week is a 3 day weekend, so I'm hoping I will have some extra time to get some baking and prep work done! Aaaaand, I just bought a yogurt maker (squeal), so I will be sure to write a post on that!

Sunday: Crockpot Baked Beans, Cole Slaw, Ham, applesauce
*Beans are one of my favorite uses for my crockpot, the cole slaw will be made with CSA cabbage, carrots, and apples, the ham is from a local meat co-op
Monday: Caprese French Bread Pizza, carrot salad, orange slices
*This meal is my 7 year old's choice. I try to let the kids pick one meal/week for the meal plan.
Tuesday: Sweet Pork Smothered Burritos , roasted vegetables
*cannot wait to make these! I have been eyeing this recipe for about a month and finally picked up a pork shoulder roast.
Wednesday: leftovers
Thursday: Taco Stuffed Peppers, salad
Friday: Greek Chicken, roasted potatoes, veggies, fruit
This is my favorite marinade and I use it all the time.
*Greek Marinade
- 2 teaspoons crushed garlic
-2 tablespoons olive oil
-2 tablespoons plain Greek yogurt or sour cream
-1 tablespoon dried oregano
-salt & pepper
1. Salt and Pepper 3 medium boneless chicken breasts
2. Mix garlic, olive oil, yogurt, and oregano
3. Pour marinade over chicken in a ziplock bag and marinate for 4 hours or overnight.
4. Bake in a 375 degree oven for 25 mins until cooked through or pan grill over medium-high heat for 6-7 minutes per side.

Saturday: Hosting a family birthday party, so I think we will be ordering pizza and I am making a big salad and all the appetizers and cupcakes!
